I need Christmas cookie recipe! I make all the cookies every year and yet don't have my favorite.?!


Question: There is a cookie that i don't know the name of i've heard it called snawballs butterballs and lots of things it is a round ball cookie i think with nuts and sprinkled with powdered suger. it is my favorite i only know of one prson who makes it and she is stingy with her recipie. does anyone know wht i am talking about and willing to give me the recipie??

Mexican Wedding Cookies

2 cups butter (no substitutes), softened
1 cup confectioners' sugar
4 cups all-purpose flour
1 teaspoon vanilla extract
1 cup finely chopped pecans
Additional confectioners' sugar



DIRECTIONS
In a mixing bowl, cream butter and sugar. Gradually add flour; mix well. Beat in vanilla. Stir in pecans.
Shape tablespoonfuls into 2-in. crescents. Place 2 in. apart on ungreased baking sheets. Bake at 350° for 12-15 minutes or until lightly browned. Roll warm cookies in confectioners' sugar; cool on wire racks.

Sounds like pecan fingers, but in ball form. Here's my mom's recipe. It comes out a little moister and tastier than the traditional mexican wedding cake cookie.

Pecan Fingers (or Balls)

1 c butter
1/4 cup powedered sugar
1/4 tsp salt
1 tsp vanilla
1 Tbsp water
1 tsp almond extract
2 c sifted flour
2 cup finely ground pecans
powdered sugar

Whip butter and sugar, add salt, vanilla, water and almond extract. Blend. Add flour and pecans. Chill briefly to firm up dough for shaping.

Shape into fingers or balls, 1 tsp size each. Bake on ungreased cookie sheet at 350 for about 15 min. while still warm, roll in powdered sugar. Makes about 10 dozen.


And if you really want to kick it up a notch, convert this recipe to make sugar plums:

cut the pecans to 1/2 cup, add 1/4 cup quick rolled oats, cut the sugar to 1/2 a cup, add 1 tsp baking soda. Form the dough into balls around a maraschino cherry. Baking directions remain the same as well as rolling in powdered sugar after. You'll get about 30 cookies from this recipe and they go fast!!
