What to bring to work for Christmas snack day?!
Answers: Any good recipes out there? Snack day is coming up and I would like to try something new. It usually is something like finger foods or appetizers. Thanks!
Chocolate Chip Cheese Ball
INGREDIENTS
1 (8 ounce) package cream cheese, softened
1/2 cup butter, softened
3/4 cup confectioners' sugar
2 tablespoons brown sugar
1/4 teaspoon vanilla extract
3/4 cup miniature semisweet chocolate chips
3/4 cup finely chopped pecans
DIRECTIONS
In a medium bowl, beat together cream cheese and butter until smooth. Mix in confectioners' sugar, brown sugar and vanilla. Stir in chocolate chips. Cover, and chill in the refrigerator for 2 hours.
Shape chilled cream cheese mixture into a ball. Wrap with plastic, and chill in the refrigerator for 1 hour.
Roll the cheese ball in finely chopped pecans before serving.
serve with gram crackers.
Cucumber Tuna Boats (3 servings)
3 medium cucumbers
1 (6 ounce) can tuna, drained and flaked
2 hard-cooked eggs, chopped
1/2 cup shredded Cheddar cheese
1/2 cup diced celery
1/4 cup mayonnaise or salad dressing
2 tablespoons sweet pickle relish
1 tablespoon finely chopped onion
1 teaspoon lemon juice
1/2 teaspoon salt
Cut cucumbers in half lengthwise; remove and discard seeds. Cut a thin slice from bottom of cucumber if necessary so they sit flat. In a bowl, combine the remaining ingredients. Spoon into the cucumbers. Serve immediately.
Cream Cheese Penguins (18 penguins)
18 jumbo black olives, pitted
1 (8 ounce) package cream cheese, softened
18 small black olives
1 carrot
Cut a slit from top to bottom, lengthwise, into the side of each jumbo olive. Carefully insert about 1 teaspoon of cream cheese into each olive. Slice the carrot into eighteen 1/4 inch thick rounds; cut a small notch out of each carrot slice to form feet. Save the cut out piece and press into center of small olive to form the beak. If necessary cut a small slit into each olive before inserting the beak.
Set a big olive, large hole side down, onto a carrot slice. Then, set a small olive onto the large olive, adjusting so that the beak, cream cheese chest and notch in the carrot slice line up. Secure with a toothpick.
Fruit with a nice fruit dip. Even I appreciate a healthy alternative to all the yummies around at Christmas.

it's called Love Dip (why? because everyone loves it of course! they will seriously be coming back for more all day until it's gone!)
1 pkg cream cheese
3 small pkgs Carl Budding Beef chopped
1 bunch green onions chopped
Accent Seasoning (you must add this or it won't taste good)- about 2-3 tablespoons (I just pour it in and keep tasting so I'm not exactly sure how much!)
mix it all together and serve with Wheat Ritz Crackers
you can double up the recipe if for a bigger crowd, keep half in the fridge till the first half is gone.

This has been a hit at parties here at my office and my husbands .
Corn Dip
2 cans mexicorn - drained
1 cup mayo
1 cup sour cream
1 cup shredded mild cheese
1 cup shredded sharp cheese
1 bunch green onions - chopped
4 oz jalapenos - chopped
4 tbsp jalapeno juice
2 tbsp vineager
juice of half of a lemon
Mix everything together. Server with corn chips or torilla chips. Best if made the night before.
For children or adults:
Children: Celery with peanut butter butterflies(if nobody has nut allergies)
Take a small piece of celery stuff with peanut butter ad 2 small pretzels to make the butterfly
For adult I like any kind of vegetables or fruit.

Reindeer Nibbles
Ingredients:
1 cup peanuts
1 cup cashews
1 cup golden raisins
1 cup chopped mixed dried fruit
1/2 cup sunflower kernels or dried coconut chips
Directions:
In a medium bowl, mix nuts, raisins, dried fruit, and sunflower kernels or coconut. Store in an airtight container or in a reclosable plastic bag until ready to serve.
Ok my mom always makes these around Christmas. I don't know any amounts but its not that difficult.

candy canes
Crush finely the candy canes. Melt the chocolate. Dip about 3/4 of the pretzel into the chocolate. Then Sprinkle candy cane bitys on top IMMMEDIATELY. Refridgerate for at least 30 min. Enjoy!

Sliced baguette bread, spread with dill dip and topped with a slice of cucumber. They're easy to make at work.
