Venison stew is great, let it cook all day with some carrots, potatos, onion, garlic, pepper, tomato (in brothed up water of course). The meat gets so tender... excellent stuff!

You could get a dehydrator, season and press the meat, and make venison jerky

********Venison Barbeque

INGREDIENTS
1 (16 ounce) bottle Italian-style salad dressing
4 (1/2 pound) venison steaks
DIRECTIONS
Marinate the venison meat over night in the Italian dressing. Flip over at least one time during the marinade.
Cook meat on the grill over medium-high heat. Cook for 20 to 30 minutes or until done to your taste.

***********VENISON LOAF WITH MUSHROOMS
4 slices soft bread, crumbled
1/2 c. milk
2 eggs
1 c. mushrooms, coarsely chopped
1/2 c. tomato sauce
2 lbs. ground venison
1 lb. sage sausage
1/2 c. chives or onions
Water
Salt
Crumble the bread into a large bowl and dampen with milk. Beat eggs and add to softened crumbs together with tomato sauce, chives or onions, mushrooms, salt and pepper as desired. Mix ground venison and sage sausage together then work into mixture evenly. Add as much water as is needed to make a good substantial loaf. Bake at 350 degrees for about an hour or until done and well browned.
If you have enough mushrooms, saute an extra quantity quickly, in butter and pour over the loaf.

*******Venison Fajitas

INGREDIENTS
Fajita Seasoning:
2 teaspoons seasoned salt
1/4 teaspoon garlic salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
1 teaspoon dried oregano

1 1/2 pounds venison, cut into 2 inch strips
4 tablespoons vegetable oil
1 medium red bell pepper, cut into 2 inch strips
1 medium yellow bell pepper, cut into 2 inch strips
1 medium onion, cut into 1/2-inch wedges
12 fajita size flour tortillas, warmed
DIRECTIONS
Combine seasoned salt, garlic salt, black pepper, cayenne pepper, and oregano to make the fajita seasoning. Sprinkle two teaspoons of the seasoning over the sliced venison. Mix well, cover, and refrigerate for 30 minutes.
Heat 2 tablespoons of oil in a heavy frying pan. Cook bell peppers and onion until starting to soften, then remove. Pour in remaining oil, then cook venison until browned. Return pepper mixture to the pan, season with remaining fajita seasoning, and reheat. Served with the warmed tortillas.

********VENISON STROGANOFF
4 c. meat cut in 1/4x1/4x1 1/2 inch strips (no fat) (if beef, use cheapest cut available)
1 c. chopped onions
2 c. sliced undrained canned mushrooms
2 cans beef stock or consomme
2 tbsp. flour
1 tsp. salt
Dash of nutmeg
2 c. sour cream
butter
Cook onions in butter in skillet until done. Separately, brown meat in butter, do not overcook. Combine meat, onions and mushrooms. Cook 10 minutes. Add consomme and cook 30 minutes.
Mix flour and seasonings with sour cream and add to mixture. Cook slowly about 2 hours or so. Serve over rice or noodles.

*******Venison Tips and Rice

INGREDIENTS
1 tablespoon vegetable oil
1 pound venison stew meat
1 green bell pepper, seeded and sliced into strips
1 red bell pepper, seeded and sliced into strips
1 small onion, chopped
1 (6.8 ounce) package beef flavored rice mix
DIRECTIONS
Heat the oil in a large skillet over medium-high heat. Add the venison chunks, and cook until nicely browned on the outside and almost cooked through.
Prepare the beef flavored rice mix according to package directions. While the rice is cooking, add the venison, green pepper, red pepper and onion. Simmer until rice is done and peppers are tender.

******THICK 'N HEARTY CHILI
2 lbs. ground venison
3 cans tomato soup
1 pkg. Lipton onion soup mix
2 cans kidney beans, drained
1 green pepper, chopped and sauteed
3 tbsp. (or more) hot Mexican chili powder, to taste
2 tbsp. jalapeno peppers, finely chopped plus 2 tbsp. juice
Brown ground venison and drain well. Add remaining ingredients, adjusting chili powder and jalapenos to taste. Simmer over low heat for 20 minutes. Serve with shredded cheddar cheese and corn bread.

I just got some deer meat from my uncle and plan to make a big pot of chili....deer chili is awesome!
Deer jerky is god too, you could use some of the steaks for jerky!

Venison Tacos...ground for picadillo, cubed for carne asada, or how about a meatloaf with the ground meat...kabobs with the cubed steaks...yum.

God I love this time of year! Fresh Venison! MMMMMMMMM! My son shot his first nubby this year and I got a doe. Anyway, we have a ton of meat too. Mix the hamburger with ground pork or bacon and make a killer chili. Actually the cubed steak could be done the same way. Stew is good but kinda cliche. With the ground meat mix you can do burgers or biscuits and gravy. Please just don't cook the hell out of it as so many people do and can't figure out why it's dry.

DEER MEAT STEW

2 lbs. deer meat
3 tbsp. butter
3 tbsp. hot sherry
1 Spanish onion
12 lg. mushrooms
1/2 tsp. crushed marjoram
4 cloves crushed garlic
2/3 tbsp. parsley, chopped
1 tsp. tomato paste
1 c. beef broth
3 tbsp. flour
1 1/2 c. red wine
6 lg. potatoes

Cut deer meat into large pieces, brown quickly in butter. Add hot sherry. Remove meat from pan. Place onions in pan and brown quickly. Cut each mushroom into 3 pieces, add to onions, cook for 1 minute. Add tomato paste, stirring until smooth. Add beef broth and 1/2 cup red wine. Add browned meat and herbs, cook slowly until tender. About 2 hours.
Add remaining red wine while cooking. Boil the potatoes and cut them up, add to the stew about 20 minutes before serving.


CAMP DEER MEAT CHILI

1/2 med. onion, diced
2 tbsp. grease
Chili meat
3 tbsp. chili blend

Directions:
You can add 1/2 pound of hamburger meat to each one of the deer meat alone makes good chili.
Sear 1/2 medium onion, diced, in 2 tablespoons grease. Add chili meat and let brown slightly in grease. Salt and pepper to taste. After you add chili, blend about 3 tablespoons to begin with, then add to suit your taste. Cover with water and let simmer; boil slowly for 25 to 30 minutes.

note:
Sprinkle a little minced garlic, too.

Deer Poppers

INGREDIENTS
1 pound venison steaks, cubed
1/2 teaspoon Greek seasoning, or to taste
1/4 teaspoon steak seasoning, or to taste
1 (16 ounce) bottle Italian salad dressing
1/2 cup jalapeno pepper slices
10 slices bacon, cut in half
toothpicks, soaked in water



DIRECTIONS
Season the venison meat with Greek seasoning and steak seasoning. Place in a bowl, and pour in enough Italian dressing to cover. Refrigerate for at least 2 hours to marinate, but preferably overnight.
Preheat the grill for medium heat. Drain the marinade from the meat, and discard the marinade. Place a slice of jalapeno on top of a piece of meat, then wrap with a slice of bacon. Secure with a soaked toothpick. Repeat with remaining meat.
Grill the deer poppers for 15 to 20 minutes, turning occasionally to brown the bacon. Serve and enjoy!



Deer Soup----Yummy!!!!

INGREDIENTS
1 onion, chopped
4 carrots, chopped
1 pound venison (deer meat)
1 pound boneless pork loin, cubed
1/2 teaspoon salt
1 teaspoon white sugar
1 pint water
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of celery soup



DIRECTIONS
Add onion, carrots, deer meat, pork, salt, sugar, and water to crock pot. Cook for 30 minutes.
Add cream of mushroom soup and cream of celery soup. Cook 3 1/2 to 4 hours.



Deer in a Hurry

INGREDIENTS
2 pounds deer chops (venison)
1 cup ketchup
1/2 cup water
1 medium onion, chopped
1/2 cup packed brown sugar
1 (1 ounce) envelope dry onion soup mix


DIRECTIONS
Thinly slice the deer chops and brown them in a heavy skillet over medium-high heat. Transfer the meat to a slow cooker. Mix in the ketchup, water, onion, brown sugar, and dry onion soup mix. Cook on LOW for 6 hours or until tender. If you want to cook it in a roaster, bake at 350 degrees F, for 1 hour.

Chili, sloppy joes, mix with ground beef and ground pork for a hearty meatloaf, tacos.

Make meatballs and pour a jar of Ragu cheese sauce over them , heat and serve.
Wrap seasoned steak in bacon and grill.

Use it just like you would beef just don't over cook it.
