Help! Does anyone have a great yet simple recipe for corned beef? I need it in the next 6 hours!?!
Bring to a boil, then reduce to a simmer, partially covered, and cook for a long time, like 2 or 3 hours, depending on the size of the meat. Check to see if it's tender; if undercooked, the meat will be rubbery and not at all pleasant. Long time cooking on just a simmer is the key.
In a separate pot, using part of the water that the meat has been cooking in, cook carrots, cabbage, parsnips, small potatoes, small onions, turnips. The vegetables will need only an hour or less.
Serve with mustard and soda bread.
Answers: Put a corned beef brisket in a big pot, cover with water, add 1/4 cup picking spices, 1/4 cup vinegar, and a bay leaf. You might want extra peppercorns.

Corned beef and cabbage .
wash corned beef in cold water .place in a pot and cover completely with fresh cold water . Simmer until tender ,allowing 45-50 minutes a pound . About 20 minutes before it is done, trim off excess fat .Add 1 cabbage cut in wedges to the pot and some potatos peeled and cut in half .Boil until potatos are done, or 20 minutes . Keep the broth . If it boils down , add more water but don't over do it .
If it's canned corned beef , do it the same only you don't have to cook it much , just get a broth going before you add the veggies .
Chop 1 onion and fry in 2 tablespoons of oil, add little crushed garlic, add 1 sliced pepper and fry slowly until softened. Add 1 tin of chopped tomatoes, 2 potatoes cut into small pieces, a carton of tomato puree, little salt and pepper, 1 teaspoon of vinegar, and 1 teaspoon of sugar. Let cook on a medium heat until the potatoes are cooked, finally add the corned beef, and mix through.
