If you are like me...you need quick to! Both of these are easy chicken dishes...

Ingredients (serves 4...but it is easy to add up extra servings..)
1/4 cup flour
1 lb boneless chicken cutlets
1 tablespoon canola oil
4 slices prosciutto (about 2 1/2 oz)
1/8 teaspoon pepper
4 small fresh sage leaves (rinsed)
4 thin slices Swiss cheese
1 cup specialty tomato basil pasta sauce

Steps
1. Preheat large sauté pan on medium-high 2–3 minutes. Place flour in shallow bowl. Dip chicken in flour, coating both sides, then shaking off any excess (wash hands).
2. Place oil in pan; swirl to coat. Add chicken; cook 3–4 minutes on one side.
3. Turn chicken; reduce heat to medium. Place one slice of the prosciutto on each cutlet and sprinkle with pepper; add one sage leaf and top with one slice of the cheese. Cover and cook 3–4 more minutes or until internal temperature reaches 165°F.
4. Meanwhile, place pasta sauce in microwave-safe bowl. Cover and microwave on HIGH 3–4 minutes or until hot. Spoon sauce onto serving plates, place chicken on sauce, and serve.

or one that kids like a lot...

Ingredients
cooking spray
1 1/2 cups gold fish crackers
1/4 cup shredded Cheddar cheese
1 egg
1 1/2 pounds chicken tenderloins

Steps
1. Preheat oven to 400°F. Line baking sheet with foil (for ease of cleanup) and coat with cooking spray. Place crackers in zip-top bag and crush; add cheese and shake to mix.
2. Whisk egg, in large bowl, until blended; add chicken, using tongs, and toss to coat. Transfer chicken from egg mixture to zip-top bag; use tongs and allow excess egg to drip off. Seal bag tightly and shake (or use fingertips) to evenly coat chicken.
3. Use tongs to arrange chicken in single layer on baking sheet. Bake 12–15 minutes or until internal temperature reaches 170°F. Serve.

Making Cajun Red Beans & Rice from scratch, this morning.
1 lb. dry red kidney beans
water to cover beans
1 cup chopped ham (optional)
2 cup finely chopped celery
2 cups finely chopped onions
1 cup finely chopped green bell peppers
5 bay leaves (optional)
salt to taste (1-2 tsp.) added when beans are nearly done
2 tsp. pepper
2 tsp. dried thyme leaves
1-1/2 tsp. garlic powder
1-1/2 tsp. oregano leaves
1 tsp. red pepper (cayenne)
1 Tbsp. Tabasco sauce
1 lb. andouille smoked sausage or Polish sausage, cut into 3/4" pieces
4 cups hot cooked rice
Sort and wash beans well. Cover beans with water 2" above beans and soak overnight. Drain just before using.
Place ham, beans, vegetables and seasonings in stockpot with ample water to cover beans by 1-2". Bring to a boil; reduce heat and simmer for 1-1/2 hrs. or until beans are tender but not falling apart.
Add salt to beans at this time. Add sausage and continue cooking until beans start to break up. Add ham meat and serve immediately over hot cooked rice.

fry chopped garlic lots and lots in olive oil, when nearly done add some lemon zest chopped, then king prawns, then juice of half lemon, then add cooked spagetti and handful of parsley, salt and pepper hmmmm

Breakfast caserole.
2 cups instant rice- cooked. (6 servings)
1 lb ground sausage
8 eggs scrambled with 8 slices of cheese
1 cup shredded cheese.

Mix all of this together in a caserole dish except the cheese. Put all the shredded cheese on top and bake at 400 for 8 to 10 minutes. It's so good. It's a good dish to make if you know you'll be busy later, just don't bake it until you get ready to eat it. If it's in the fridge a while you should cook it longer.

Pulled Pork

1 cheapo pork roast
2 bottles bbq sauce (your families fav one)
buns


In a crockpot.. dump in 1 bottle of sauce
put roast on top
cover and cook all day til for tender
remove the roast and let cool til you can handle withtout burning yourself
disgard whats left in the crock

once its cooled ..pull it apart with your hands or 2 forks (DO NOT CUT IT)
put back in the crock and add some of the 2nd bottle to taste.
serve on a bun with coleslaw on side on or on sandwich.

Coleslaw
1 bag shredded slaw
1/2 bottle ranch dressing (not lite)
1/4 cup mayo (not lite)
1/4 cup sugar

mix everything but the shredded slaw and let sit til the sugar melts.. mix with the slaw and serve

cabbage rolls

1 medium size cabbage
1 lbs of ground chicken
1 lbs of ground beef
1 large onion
1/2 cup of white rice
1 egg
1 bun
salt
pepper
marjoram
butter or lard or oil

-cut core out of cabbage
dunk cabbage in boiling water (leave it boiling for a while) and slowly peel off the leaves so they come off as one by one - set aside
-take bun and soak in water (you need this to make the roll softer and more bonded)
-combine both meats, chopped onion, egg and soaked bun and boiled rice
-add salt, pepper and marjoram to taste
-put meat filling on cabbage leaf and try to make into a wrap (tuck sides in so meat is sealed into cabbage)
place in casserole dish
-add water to cover the rolls half way
-add butter, oil or lard 2 tablespoons into the water
-bake for 1hr at 350 degrees or longer

take them out and you can use any tomato sauce you want and pour over the rolls.

voila!
