Favorite simple quick dinner are these rice and chili burritos.
(15 ounce) can chili with beans
1/2 cup instant rice or brown rice
1 cup water
1/2 cup shredded cheese
3/4 cup salsa (optional)
10 tortillas (about)
-Heat chili in saucepan. Once heated, add uncooked rice and water. Stir together and let simmer over medium heat about 10-15 minutes until rice is cooked. Don't forget to stir!
Once cooked throughout, turn heat down. Place about 1/3 cup mixture on tortilla and top with 1-2 tablespoons shredded cheese and a few tablespoons salsa and roll up. Once all burritos have been made, zap in microwave for 30-60 seconds to melt cheese and reheat.
Favorite dessert is Apple French Bread Bake:
6 tablespoons butter
8 ounces French bread, loaf (with crust)
1 1/2 cups brown sugar, packed
1 cup water
1 teaspoon cinnamon
2 tablespoons butter
2 large apples
6 ounces cream cheese, 1/2 inch cubes
1 cup walnuts, chopped
whipped cream or vanilla ice cream
-Preheat oven to 350 degrees. Cut bread into 3/4 inch cubes. Place 6 tbsp butter into bottom of a large baking pan. Melt in oven. Add bread cubes and toss to coat evenly. Bake bread until crisp and slightly browned, stirring occasionally (about 20 minutes). Remove bread from oven and raise temp to 400 degrees. Simmer brown sugar, water, and cinnamon in a saucepan until the sugar is dissolved and it is syrupy (about 5 minutes). Add 2 tbsp butter to mixture while hot and stir until melted. Peel and core apples and cut into a small dice. Combine apples, bread cubes, cream cheese cubes, and walnuts. Pour syrup over all and toss to coat. Butter a 9x13 inch dish well. Pour mixture into buttered dish and spread evenly. Bake in 400 degree oven for 40 minutes. If browning too quickly, loosely cover with aluminum foil. Serve warm topped with whipped cream or ice cream!
Best jazzed up cake mix cake is Ugly Duckling Cake:
1 (18 ounce) box yellow cake mix
1 (17 ounce) can fruit cocktail, including juice
2 eggs, large
2 cups coconut
1/2 cup brown sugar, packed
1/2 cup evaporated milk
1/2 cup sugar
1/2 cup butter
-Preheat oven to 325 degrees. In large mixer bowl, combine cake mix, fruit cocktail and liquid, eggs and 3/4 cup coconut.
Blend well, beating at medium speed for 2 mintues. Pour into a greased 9 x 13 x 2 inch pan. Sprinkle with brown sugar. Bake for 45 minutes or until cake springs back when pressed gently with finger. Meanwhile, in small saucepan, heat milk, sugar and butter. Let boil for 2 minutes. Remove from heat and stir in remaining 1 1/4 cups coconut. Spoon over hot cake in pan before serving. Serve warm or cool.
Best Lasagna to impress others with:
9 whole wheat lasagna noodles (about 8 oz)
1/2 cup onions, chopped
3 garlic cloves, minced
1 lb ground turkey
1 cup mushrooms, thinly sliced
1 green pepper, deseeded and diced
1 large tomato, diced
3 cups tomato sauce
2 teaspoons oregano
1 teaspoon basil
1 teaspoon dried parsley
1/2 teaspoon fresh ground black pepper
6 cups fresh spinach, chopped
2 cups fat-free ricotta cheese
3 teaspoons dried chives
8 ounces part-skim mozzarella cheese, grated
-Preheat oven to 350°F. Spray a large nonstick frying pan with vegetable cooking spray. Cook onion and garlic for several minutes stirring constantly. Add turkey and cook (crumbling the meat fine) until barely done about 4 minutes (if using precooked rinsed meat you don't need to cook for 4 minutes, just go to the next step). Add the mushrooms and cook for another 2-3 minutes. Add the green pepper, tomato, tomato sauce, oregano, basil, parsley and pepper and simmer 2-3 minutes. Remove frying pan from heat. While the sauce is cooking, cook noodles in a large pot of boiling water that has been sprayed with vegetable cooking spray until al dente. Drain noodles and rinse with cold water and drain. In a bowl, combine ricotta and chives, mix in spinach.
Spray a 9x13-inch baking pan with vegetable cooking spray.
Arrange 3 lasagna noodles on the bottom of the pan. Spread evenly with one third of the ricotta mixture, then one third of the turkey mixture, and sprinkle with one third of mozzarella.
Repeat twice with remaining ingredients. Bake for about 25 minutes or until cheese bubbles. Cool at least 5 minutes before cutting.

2 large eggs
2 tablespoons molasses
2 teaspoons vanilla
1/3 cup water
1 1/2 cups granulated sugar
1 1/2 cups brown sugar, packed
1 teaspoon baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
5 cups all-purpose flour
6 ounces semi-sweet chocolate chips (or more if you desire)
-Preheat oven to 375°F. Cream the butter, eggs, molasses, vanilla and water in a medium bowl. In a large bowl sift together the sugars, baking powder, baking soda, salt and flour. Combine the moist mixture with the dry mixture; add the chocolate chips. Shape the dough into 1-inch balls and place them 1-inch apart on an ungreased cookie sheet. Bake for 8 minutes or until golden brown around the edges. Be careful not to over bake!

Scalloped Potatoes
Ingredients
3/4 cup (packed) grated extra-sharp cheddar cheese (about 4 ounces)
3/4 cup crumbled Danish blue cheese (about 4 ounces)
1/3 cup (packed) freshly grated Parmesan (about 1 1/4 ounces)
4 pounds russet potatoes, peeled, cut into 1/4-inch-thick rounds
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
1/4 cup finely chopped onion
3 tablespoons all purpose flour
4 tablespoons butter
3 cups whole milk
Directions
Preheat oven to 400°F. Lightly butter 13x9x2-inch glass baking dish. Mix cheddar cheese, blue cheese and Parmesan in small bowl.
Arrange half of potatoes in prepared baking dish, overlapping slightly. Sprinkle with teaspoon salt and 1/4 teaspoon pepper. Sprinkle onion over, then flour. Dot with 2 tablespoons butter. Sprinkle half of cheese mixture over. Top with remaining potatoes, 3/4 teaspoon salt, 1/4 teaspoon pepper and 2 tablespoons butter. Reserve remaining cheese.
Bring milk to simmer in medium saucepan. Pour milk over potatoes (milk will not cover potatoes completely). Cover baking dish tightly with foil. Bake 45 minutes. Uncover dish (liquids in dish may look curdled); sprinkle potatoes with reserved cheese mixture. Bake uncovered until potatoes are tender and cheese is deep golden brown, about 45 minutes longer. (Can be prepared 2 hours ahead. Let stand at room temperature. Cover and rewarm in 375°F oven about 20 minutes.) Remove from oven; let stand 15 minutes before serving.
Tripe and Onions.
1lb Tripe.
2 Medium Leeks
2 Large onions chopped.
Potatoes.
Parsley sauce.
Boil the tripe for 15 minutes and drain.
Cut into bite sized pieces.
Return to pot with more water bring to the boil as simmer for 30 minutes.
Add onions when water boils and stir.
Use some flour to thicken, and add fresh or dried parsley.
Steam the leeks over the potatoes as they boil
Mash potatoes to a drish mix so that it will mop up the sauce.
Serve potatoes and leeks.
Serve the tripe and onions and pour over the sauce.
I love macaroni and cheese. I don't know the recipe but it's good.
