Submitted a recipe for lasagna, black bean soup, creamy raspberry pie, and zuppa toscana soup!

Tripe and Onions.

1lb Tripe.
2 Medium Leeks
2 Large onions chopped.
Potatoes.
Parsley sauce.
Boil the tripe for 15 minutes and drain.
Cut into bite sized pieces.
Return to pot with more water bring to the boil as simmer for 30 minutes.
Add onions when water boils and stir.
Use some flour to thicken, and add fresh or dried parsley.
Steam the leeks over the potatoes as they boil
Mash potatoes to a drish mix so that it will mop up the sauce.
Serve potatoes and leeks.
Serve the tripe and onions and pour over the sauce.

How GREAT!! Good Luck and I would feel honoured if you could use mine for your book!! You GO GIRL!!! I buy sheneiders smokey links w/cheese wrap them in thawed frozen bread dough pinch tight!! and bake at 350 for 30 min or till just golden on the outside. Brush with butter if you wish and sprinkle on a little herbs or a bit of parmesan!! Shneiders smokey link will be in your breakfast sausage isle. YUMMMMMYYY!!

I have made a few of these and they were delicious!

BEEF CHASSEUR A LA BELCARO

1 lb. sirloin steak or steak of your choice
1 c. wide noodles which have been broken in about 2-inch pieces
1/2 stick (1/4 c.) butter
1 can (10 1/2 oz.) concentrated vegetable-beef soup
3 tbsp. half & half cream or canned milk
3 tbsp. (about) dairy sour cream
Dash Worcestershire sauce
1 tbsp. port wine

Cook steak over charcoal to rare stage. Cut steak in about 1-inch cubes (Two cups cubed leftover beef roast may be substituted for steak, if desired). Cook noodles according to package directions; drain thoroughly. Melt butter. Add soup. Cook a few minutes over moderate heat. Add steak. Cook a few minutes over moderate heat. Add half & half cream and enough dairy sour cream for desired consistency. Add noodles, Worcestershire sauce and wine. Heat to serving temperature. 4 servings.

Czech Potato Pancakes

Ingredients
three large potatoes, peeled
1 egg
1/2 tsp. onion salt
1/2 tsp. regular salt
3 more-than-level Tblsps. flour
cooking oil, to cover bottom of pan

Preparation:
Put water into pot, enough to cover potatoes plus
three inches.
Peel three large potatoes and put them into the
water.
Take out bowl and break in the one egg, salt, onion,
salt and flour.
Mix these together slowly but thoroughly.
Take potato grater after blotting potatoes to dry.
Grate potatoes and mix them, one by one, into the
bowl's contents.
Take out a heavy frying pan.
Cover the bottom plus a little with cooking oil.
Set stove light/burner a bit above low.
Try one pancake as formed to make sure oil is hot
enough.
Fry pancakes one by one.
Use another brown paper bag for setting them on as
done.
Blot top of pancakes to remove grease if necessary

Makes enough for two--three persons

Serving Suggestions:
Czech potato pancakes accompany meat, such as pork
or beef, a Hunter's stew or can be partnered with a
cream of broccoli or other hearty cream of vegetable
soup. We usually serve pudding as a dessert since the
potatoes are rich; I have also used them as a major
side dish with a fish souffle, fish gratin or breaded chicken or sausage dishes of many sorts.
Serve with a medium white wine or a medium beer.
