The cookies I bake...?!


Question: ends up looking really bad, it's not fluffy or anything like normal cookies, it sticks to the sheet, and it never fully bakes on the inside. What am i doing wrong?

I'm not calling you a dummie! But this website is extremely helpful, it lists all the common problems and some easy fixes for the next time!

If they are not rising, the baking powder you are using may be bad. Another problem could be that you oven it not heating to the correct temp so you may need to alternate racks or best of all place one tray only in the oven in the very center. Cooking them to long or not properly preparing your cookie sheet could also be a factor. I personally like parchment paper as I can pick up the parchment with the cookies on it and cool them that way. If left on the cookie sheet more than 2 minutes, they continue cooking as it takes a bit for the metal to cool.

Test your oven. Put a thermometer in there to see if it is really reaching the correct temperature. If that is good and you've been able to make cookies on your cookie sheet without them sticking to it, then it's not the cookie sheet either. That would lead me to your recipe.

My mother got a recipe of the net for Coconut Macaroons that called for coconut and condensed milk - don't remember what else. No matter how she cooked them, those suckers stuck to the cookie sheet and would fall apart when she tried to get them off - sometimes they weren't done in the middle too. Make sure you don't let your cookies sit longer than 1 minute on the cookie sheet before removing them. If they aren't done in the center, try turning your heat down. So change it from 375o (if that's what temperature you are baking them) down to 350o. That should allow the center to cook without making the cookies too dark.

Another solution to sticking cookies is a silpat cookie sheet liner. You place it on the cookie sheet and it requires no greasing. The cookie won't stick to it and it is easily washed and reused. You can find them in most cooking supply areas of various stores, but in a gourmet cooking shop for sure. A high temperature will make cookies spread out quickly. You might try chilling the dough before dropping on to sheet as well as baking at a lower temperature for a longer time.

Make sure you have a fresh package of baking powder and do not use margarine, use butter.
