No red sauce? But you need to cook the veggies. Try this for something a little mindless, but tasty.
Add a little olive oil to a baking pan. First boil up the carrots a bit to get them started. If whole carrots, slice them, if baby carrots, leave them whole. Cut the peppers in strips, slice the onions. Put all in the baking pan with the oil and toss to coat. Add some oregano, parsley, basil, and roast until tender. Cook up your whole wheat pasta, drain. Add a little extra olive oil and some more of the herbs, add the veggies and toss well. This would be really good with some crushed fresh garlic (or very finely chopped if you don't have a garlic crush). Serve and top with some nice parmesan or Romano cheese. (Hopefully it's not the stuff in the cardboard can). Enjoy! That's a nice, healthy meatless dish. I'd maybe add some nice, steamed fresh broccoli.
Cook the peppers, onion, and carrots, add some tomatoes (finely diced to almost a soupy consistency) then add some spices to taste.
Cook the pasta and serve with sauce prepared.
if you like zuccini squash julian cut some of those(slivers) instead of tomatoes use sun dried tomatoes add pesto sauce and either shrimp or chicken breast...with your list of ingrediants cook all veggies pan fry the chicken or shrimp add to veggiesand last add pesto sauce.
