I need a fairly easy recipe for chicken casserole w/ veg all,HELP????!

Bake or Boil Chicken Breasts, as many as you think you'll need. Cut 2-4 large potatoes in 1/8 slices, or thinner...Dice cooked chicken. 4 chicken breast halves, boneless, pounded slightly to even thickness
Creole or Cajun seasoning blend or other blend

PREPARATION:
Heat oven to 350°. Lightly grease a 9x13-inch baking dish or spray with cooking spray. Put spinach in the baking dish, sprinkle with salt and pepper. Add chicken broth. Sprinkle chicken with seasoning blend, salt, and pepper; arrange over the spinach.
Sprinkle with the diced tomato and green onion. Cover the baking dish with foil. Bake for 25 minutes. Uncover and bake for 10 to 15 minutes longer, or until chicken is cooked through.

CHICKEN VEG-ALL PARMESAN BAKE
1 can (15 oz.) Veg-All Original Mixed Vegetables
1 can cream of celery soup
1 can (10 oz.) chunk style white meat chicken, drained
2 cups bread crumbs
1/2 cup grated Parmesan cheese, divided
Preheat oven to 350 F.
In a mixing bowl, stir together Veg-All with liquid, soup, chicken, bread crumbs, and 1/4 cup Parmesan cheese.
Spoon into a 2-quart casserole dish.
Bake 25 to 30 minutes or until edges of mixture are bubbly.
Top with remaining 1/4 cup of Parmesan cheese.
Bake 5 minutes more.
Serve hot.
Makes 4 to 6 servings
CHUNKY CHICKEN AND VEG-ALL RICE
2Tbsp. butter
1 clove garlic, minced
2 Tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 cups half-and-half
1/2 cup grated Parmesan cheese
1 lb. cooked chicken breast, cut in 1- inch cubes
1 cup instant white rice, cooked according to pkg. directions
1 can (15 oz.) Veg-All Original Mixed Vegetables
1/3 cup almonds, toasted
Preheat oven to 350 F.
In a medium saucepan, saute garlic in butter over medium heat.
Stir in flour, salt, and pepper.
Add half-and-half and stir over medium heat until bubbly.
Add Parmesan cheese and stir until melted.
Fold in chicken, rice, Veg-All, and almonds.
Pour into a 9- x9-inch greased baking pan.
Bake uncovered for 30 minutes.
Let stand 5 minutes.
Makes 6 servings
STUFFED VEG-ALL CHICKEN BREASTS
1 package/box (6 oz.) stuffing mix
1 can (15 oz.) Veg-All Original Mixed Vegetables, drained
1 cup shredded Swiss cheese, divided
8 boneless chicken breasts, pounded to 1/4" thickness
Paprika, as needed
Preheat oven to 375 F.
Prepare stuffing according to package directions; cool slightly.
Add Veg-All and 1/2 cup cheese.
Stuff each chicken breast with 1/2 cup stuffing.
Secure with toothpicks.
Top chicken breasts with remaining cheese and sprinkle with paprika.
Bake 40 minutes.
Heat remaining stuffing in baking dish for 20 to 30 minutes.
Makes 6 servings
melt 1/4 cup butter...drain 2 cans veg all and add to butter..sprinkle quarter cup flour over veggies and cook for two minutes add the 1 can of chicken broth...simmer for 5 minutes till thickened.....add cooked chicken....stir...poor into baking dish....top with canned biscuits..cook till biscuits are brown...about 10 minutes at 400...enjoy!!!!!
