Sweet and Sassy Meatballs
64 meatballs
Start to Finish: 30 minutes

Ingredients
1 16-ounce can jellied cranberry sauce
1 18-ounce bottle barbecue sauce
2 1-pound packages frozen cooked meatballs, thawed (32 per pound)

Directions
1. For sauce, in a large skillet stir together cranberry sauce and barbecue sauce. Cook over medium heat until cranberry sauce is melted, stirring occasionally.

2. Add meatballs to sauce. Cook, uncovered, for about 10 minutes or until meatballs are heated through, stirring occasionally. Serve immediately or keep meatballs warm in a slow cooker on low setting to serve. Makes 16 servings.

3. Make-ahead directions: Prepare as directed in Step 1. Stir in frozen or thawed meatballs. Place in an airtight container. Cover and chill for up to 24 hours. To serve, heat meatballs and sauce in a large skillet over medium heat until heated through, stirring occasionally.

4. Chipotle-Sauced Meatballs: Prepare as above, except substitute one 12-ounce bottle chili sauce for the barbecue sauce and stir in 3 to 4 tablespoons finely chopped canned chipotle pepper in adobo sauce.

5. Hawaiian-Sauced Meatballs: Prepare sauce as above, except substitute one 8-ounce can crushed pineapple, undrained, for the cranberry sauce.

*LITTLE SMOKED SAUSAGES CAN BE USED IN PLACE OF MEATBALLS

Mini Meat Turnovers
40 turnovers
Prep: 50 minutes
Bake: 10 minutes per batch

Ingredients
1-1/4 pound lean ground beef
1 15-ounce can tomato sauce
2 teaspooons chili powder
2 teaspoonos dried oregano, crushed
1 teaspoons garlic powder
1 tablespoon snipped fresh cilantro
2 10- to 12-ounce packages (20 total) refrigerated buttermilk biscuits
Milk
Salsa (optional)

Directions
1. For filling, in a large skillet cook ground beef until brown; drain off fat. Stir in tomato sauce, chili powder, oregano, and garlic powder. Bring to boiling; reduce heat. Simmer, uncovered, for 5 minutes. Remove from heat. Stir in cilantro.

2. Grease a large baking sheet; set aside. Separate biscuits; cut each biscuit in half horizontally. On a lightly floured surface, roll each piece of biscuit dough into a 4-inch circle. Place about 1 tablespoon filling onto half of each circle. Fold opposite side of circle up and over filling. Brush edges with a little milk; seal edges with a fork.

3. Place filled turnovers 1 inch apart on prepared baking sheet; brush with milk. Bake in a 350 degree F oven for 10 to 12 minutes or until golden brown. Immediately remove from baking sheet. Cool slightly on a wire rack. Serve warm. If desired, serve with salsa for dipping. Makes 40 turnovers.

Make-Ahead Tip: Cool turnovers completely on wire racks. Place in an airtight freezer container; freeze for up to 3 months. To reheat, transfer frozen turnovers to an ungreased cookie sheet. Bake, uncovered, in a 350 degree F oven for 10 to 12 minutes or until heated through.

To Tote: Cover hot turnovers tightly. Transport in an insulated carrier.

Tip: If making the 40-turnover recipe, remove only one package of biscuits from the refrigerator at a time.

Get your crock pot, line it with aluminum foil, line the inside with ribs, put in about 2 cups of water, cook on high for a few hours, put bbq sauce on cook for another hour....

I wish there were a way to save and reprint these answers. I think I gave this to someone last week. Anyway, because I work long days and potlucks usually occur during the week when I don't have much time for cooking, I use this recipe a lot. Also, there is no fat in it and no animal products so almost everyone can eat it.

Susan's Black Bean Salad

3 cans of black beans, drained and rinsed
1 red bell pepper, seeded & diced
1 green bell pepper, seeded & diced
1 bunch scallions, diced
1 Mango, peeled, seeded and diced
1 bunch of cilantro, chopped (optional)
1 jar of your favorite salsa (not to hot if you want everyone to be able to eat it)
Juice of four limes
Salt and pepper to taste

Combine all of the ingredients refrigerate overnight.

If you would like, add about 1 cup of diced cotija cheese (use feta if you can't find cotija) sprinkle it over the top before serving. This of course makes it vegetarian and not vegan.

Good luck. I have never know anyone who did not like this salad.

Go to your local Deli and ask a tray for whatever you like. Beats the hassle and buying ingredients.

add 1/2 stick butter sugar and cinnamon to taste you then have a twist on baked apples.

Crock pot cake!

In your crock pot throw in 3 cans of crushed pineapples....drain one can. Throw in a can of cherry pie filling. Mix together. Take a bag of cake mix pour it on top. Add a few slices of butter on top to help the cake mix brown. Turn on your crock pot and let the magic happened for about 4 hours......before you know it you'll be eating the best damn dessert you have had in along time!

Crockpot Sweet Sour Meatballs
Ingredients:
2 lbs. precooked frozen meatballs
1 cup grape jelly
2 cups cocktail sauce
Preparation:
Heat meatballs in oven as directed on package. Place in 3-4 quart crock pot. Mix jelly and cocktail sauce thoroughly, pour over meatballs, stir well, cover crock pot, and heat on high 1-2 hours until sauce is hot. Turn heat to low until ready to serve, stirring occasionally.
