Does anyone know any soups that have potatos and barley or lentils in it?!


Question: When I was little my grandma used to make this soup. I'm not sure what was in it. All I remember is potatos, and barley/possibly lentils. It was really good but my grandma never wrote it down. She died many years ago but no one seems to remember anything about the soup except how good it was. I hate to think the recipe is lost forever. Does anyone know any soups that have potatos and barley or lentils in it?

Try this. 32 ounces of beef broth; put on stove in a deep skillet, cast iron if you have one. A stew pot will work too, I just like cast iron. Add cubed raw potatoes, uncooked barley, lentils, and anything else you might want to put in- carrots, whatever. Heat it to just boiling, reduce heat to simmer for 1 1/2 to 2 hours (when the potatoes are done, the soup's done. You can do the same in a crock pot too, it'll take about 6 to 8 hours on low heat. You're making me hungry! Good luck with it!

You can put chopped potatoes in lentil soup...the barley is normally only used in vegetable soup. If she was from an old country...Germany, Italy, France, or other European country, you may want to look up recipes online. Maybe one of your older relatives would remember the name of the soup. I wrote down my father's recipes before he died.

POTATO-BARLEY SOUP

1 large Onion -- diced
2 Celery stalks -- diced
4 Garlic cloves -- minced
3 quarts chicken stock -- or beef
1/2 cup barley -- rinsed
2 Carrots -- diced
2 large Idaho potatoes -- peeled and diced
1/4 teaspoon Pepper
Salt to taste

SAUTE THE ONION, CELERY and garlic in a bit of the stock until the vegetables
become translucent. Add the stock, barley and carrots.
Simmer gently, stirring occasionally, about 2 hours. Add the potatoes after the
soup has cooked 1 hour. If the soup gets too thick, a
dd more stock or water. Taste for seasoning and add salt and pepper as needed.

GUMBO SOUP

There are many good lentil soup recipes out there! One good one is:

INGREDIENTS
1 pound lean ground beef
1 medium onion, chopped
2 cups cubed red potatoes (1/4 inch pieces)
1 cup chopped celery
1 cup diced carrots
1 cup dry lentils, rinsed
1/2 cup medium pearl barley
8 cups water
2 teaspoons beef bouillon granules
1 teaspoon salt
1/2 teaspoon lemon-pepper seasoning
2 (14.5 ounce) cans stewed tomatoes

DIRECTIONS
In a nonstick skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Transfer to a 5-qt. slow cooker. Layer with the potatoes, celery, carrots, lentils and barley. Combine the water, bouillon, salt and lemon-pepper; pour over vegetables. Cover and cook on low for 6 hours or until vegetables and barley are tender. Add the tomatoes; cook 2 hours longer.

I will often use them in my big pots of vegetable soups. I use what ever I have at hand.

VEGETARIAN LENTIL SOUP

1 c. lentils, rinsed
1 1/2 qt. water
1/2 c. barley
1/4 c. oil
1 med. onion, chopped
1 lg. rib celery, chopped
1 med. carrot, diced
1 med. potato, diced
1 1/2 tbsp. parsley
10 oz. canned crushed tomato
1 1/2 tsp. salt
1/4 tsp. pepper

Combine all ingredients; simmer covered for 1 hour. Add more water, if necessary.

Lentil Soup
Prep: 15 min.
Cook: 30 min.

Ingredients
1 cup dry lentils
5 cups water
1 cup chopped green sweet pepper
1 cup sliced carrot
2 cups diced potatoes
1/2 cup chopped onion
2 teaspoons instant chicken bouillon granules
2 teaspoons snipped fresh sage or 1/2 teaspoon dried sage, crushed
1/8 teaspoon ground red pepper
2 cloves garlic, minced
1/2 pound fully cooked smoked sausage links, sliced diagonally
Snipped fresh parsley (optional)

Directions
Rinse and drain lentils. In a large saucepan or Dutch oven combine lentils, water, green sweet pepper, carrot, potatoes, onion, bouillon granules, sage, ground red pepper, and garlic. Bring to boiling. Reduce heat and simmer, covered, about 30 minutes or until vegetables and lentils are tender. Stir in sausage and heat through. If desired, garnish each serving with parsley. Makes 4 servings.

Make-Ahead Tip: Prepare soup; cool slightly. Transfer to 1- to 4-serving size freezer containers. Seal, label, and freeze up to 1 month. To reheat, transfer frozen soup to saucepan. Cook, covered, over medium heat until heated through, stirring occasionally to break apart.

Potato and Barley Soup
Barley soup needs very little attention while cooking. It has long been a favorite recipe for a busy day.

12 oz. cubed stewing beef
5 cups water
1 tbsp beef bouillon
1/4 cup pearl barley
1 medium chopped onion
1 small turnip
2 stalks celery
3-4 medium carrots
4 medium potatoes
1 bay leaf
1/4 tsp pepper
1/4 tsp thyme

Brown beef in a non-stick pot. Add water, bouillon and barley. Bring to a boil and simmer while preparing vegetables. Peel all vegetables and cut into small pieces. Add soup, along with bay leaf, pepper and thyme. Bring to a boil. Cover and reduce heat to simmer. Cook for about 2-2 1/2 hours until meat and barley are tender. Serves 6.

Variation: chicken, pork, lamb or turkey can be used in place of beef.

I have had both Lentil soup with potatoes added and a Beef Barley soup with potatoes in it--both were made my older women who were descended from "peasant" families (as are both sides of my own family). It was probably how your grandma's mother had stretched the soup to serve the family.

You might try a recipe that looks good, add some cubed potatoes, and see what you think.

Chinese & Vietnamese Soups can have Potatos & sometimes barley in the Soup.

I have grown to love Hot & Sour Soup, with Green Onions & Bits of onions in it. I am no Soup Expert, but I believe what you are Describing is a Stew. You might do some Internet Research on Stew Recipies.
