I make this for every major family gathering, and it is always a huge hit, and very simple. Buy a few cans of Bruce's Yams in the canned vegatable section, depending on the size of your gathering. Then open the can, don't remove the lid yet, and drain the yams. Now add them to a large frying pan. Add butter and brown sugar in small amounts over medium heat until the brown sugar/butter is melted all around the yams. If you add too much, your mixture will take longer to thicken. Carefully stir and flip the yams to coat them in the mixture. Canned yams are very fragile since they have been sitting in liquid for so long. Now just wait until it seems like the brown sugar/butter mixture seems to thicken and become candy like. Then grab an oven dish that will fit your yams and gently fill your oven dish. Add a little bit more butter and brown sugar over the top and pop in the oven. I usually put it in at 350 for about a half hour. (It will be bubbling and sizzling) Remove the yams from the oven, cover the top with mini marshmallows, and put back into the oven until the marshmallows are golden brown. Yum! You're all set now!

If you don't want a zillion calories from cream and sugar, try cutting the potatoes into long wedges, coating them with a little olive oil, and a very little salt, then roasting them in the oven for about 1/2 hour at 400 degrees. This brings out the natural sugars -- they're quite sweet. This is my favorite way of preparing them.

So simple, here you go...
4 cans of yams ( drained)
1 can pineapple chunks (drained)
sprinkle brown sugar over it
top with marshmellows
bake @ 350 until marshmellows are golden
