Parchmnet Paper and Baking?!
Answers: I have a recipe that calls for cookies to be baked on parchment paper. What purpose does this serve in the baking process, and how bad will they be if I don't use parchment paper? I forgot to buy it at the store, but if it will make them come out really bad I'll go and get some before I bake.
it really depends on your pans.....also, how experienced are you with baking? I always follow a recipe by the letter the first time i make it, not knowing what to expect. I personally would not risk it and wait until I had the parchment paper.
parchment is like wax paper but not waxy. if you are baking cookies you can just spray your pan with non stick spray.

it just guarantees a non stuck cookie....like your girl said..just spray your pan...you'll be fine!
it helps from sticking to the pan! and it also helps it from burning! instead of the cookie being right on the metal pan it has a layer between it! As long as you keep an eye on your cookies you can do without it! if you butter the pan it will keep it from sticking and gives it a nice golden bottom!!
As your skill and experience with cooking and baking increases you will find more and more uses for parchment paper. It is one of those things you should probably keep on hand.
In the case of the biscotti, it will prevent sticking and burning. Don't take a chance on just spraying the pan. Follow the directions.
The difference between baking and cooking is that with baking it is that the recipe is like a mathematical formula; you need to follow it precisely or you won't get the exact result anticipated. You may get close but it won't be exact.
