Did you know that when you prepare veg the day before the only veg that needs to be kept in water is potatoes?!
Answers: Its true!! Of course they have to be cooked in water! We do this at work 1 or 2 days before we make a huge pan of veg soup we put the taties in a bucket with cold water and the other veg in a bucket with no water!! Carrots, turnips, leeks lovely, and they are as fresh as anything, dont go black or dry up!

Yes, the potatoes will turn black.
The green vegetable need not be sock in water. Just put them in an air tight container and put them in the fridge.
interesting, prob because of the starch in potatoes.
There is NO goodness or vitamins in veg prepared from the day before.
