What are some healthier pancake mixes...?!


Question: I stopped using Bisquick because of the high sodium and trans fats, and Heart-Smart Bisquick has enriched flour, so I was wondering if there are any "healthy" pancake mixes out there? Maybe a whole grain or flax variety? Thanks in advance and Happy Holidays.

The only ingrediants that a mix has over home made by scratch is the baking powder, soda, etc in them...so here is a by scratch that is supberb!!!
2 c whole wheat flour
2 T sugar
4 t baking powder
1 t salt

Mix all the dry ingrediants together, set aside

In a 4 c mixing cup, mix the following ingrediants:
2 eggs
2 c milk
2 T melted butter

Stir until well mixed....ADD 1 c shred apple

Pour into the dry mix and stir until just incorporated, will be lumpy. Let batter stand for a couple of minutes. Pour onto a hot griddle...

Here is a great syrup that you can make to go with them:
Apple Syrup
2 c apple cider or unfiltered apple juice
1 c sugar
14 c butter
2 T corstarch
2 T lemon juice
1/4 t cinnamon
1/4 t nutmeg
Cook all on med heat on the stove top until slightly thickened.
Serve warm over pancakes or waffles. Also great for french toast!!

Check at your local health store.
They will have a mix for you, or at least a healthy flour to make your own mix.

if you have a whole foods or trader joes in your area, check it out because i always get my muffin and cake mixes from there... a lot better for you but check the labels just in case

Or, just make your own. If you can find powdered buttermilk at your local grocery store, try the recipe on the can. You can premix all the dry ingredients and keep them in an airtight container. This way, you can control what goes in to your mix.
