Do home made cakes get DRY-er then cake MIXes?!

Question: My home made cakes (pound cakes) are not DRY-er, they are more solid but moist. Cake mixes, I find ... lack substance.

they can, sure

Yes, the reason is because cake mixes tend to have a lot of chemical additives, whereas homemade cakes do not, if you want to make a homemade cake try adding pudding to the receipe including the flour content as part of a dry mix, this should help.

And I thought it was the other way around - that mixes are dryer and go dryer faster because of the chemical that are added.

It probably also depends on the cake mix. Here is a really interesting website that tells all about cake mixes. It has a section on storing. It also appears from looking at it that moistness has been an issue from day 1.

Probably more than you wanted and didn't really answer your questions, but interesting reading never-the-less.
