What's the best tasting salmon you've had? and how was it done?!

I like it smoked and grilled.


GRILLED SALMON WITH CABERNET SAUVIGNON
SAUCE

FOR THE SAUCE:

1/4 tsp. fresh squeezed lemon juice
2 tbsp. olive oil
1/2 c. Cabernet sauvignon wine
1/2 c. beef stock
1/2 c. chicken stock
2 shallots
2 tbsp. butter
Salt & pepper to taste
6 portions of salmon fillet, 8 oz. each

Chop shallots and place in a saucepan with the wine. Reduce by about 2/3. Add beef and chicken stock and reduce by 1/2; set aside. Brush the salmon fillets with olive oil and season with salt and pepper. Place on a grill for about 2 minutes on each side. Return sauce to the stove and incorporate butter; strain and add the lemon juice. Place salmon fillets on plates and nap with the sauce.
Serves 6.

Grilled with teriyaki sauce. My uncle is Japanese/American and he taught me to make teriyaki sauce.
You marinate the salmon on the counter for 1/2 or 1 hour in the teriyaki sauce. When you put the salmon on the grill, the teriyaki sauce goes on in a saucepan to get hot, too. Baste until salmon is done, which depends on thickness.

When I was in Paris for new years, my French friend prepared salmon for lunch. He simply rinsed and steamed it, and it was wonderful! There was no sauce or anything to take away from the pure, fresh flavor of the fish. He served it with steamed broccoli, salad, and a baguette. For dessert we had buche de noel.

I went to a restaurant in Northern California and they served fish and chips that were out of this world! They were made from Salmon and I drool every time I think about them. The restaurant is Salt Point Restaurant in Timber Cove. I use the breading recipe from Long John Silvers copy cat recipes and it works pretty well. I also like salmon in fish tacos. Here's my recipes.

Long John Silvers Fish-type Batter

1 egg white
3 tsp. baking powder
1 tsp. oil
3/4 cup water
1 tsp. salt
1 cup flour


Beat the egg white until stiff. Combine remaining ingredients and then add to the stiff egg
whites. Coat fish in the batter and then deep fry! Its fantastic!
Serves: 2 cups batter

Red and White Fish Tacos

1 lb. red snapper, boned and skinned
1 lb. wild king salmon, boned and skinned
1 Tbs. kosher salt
? Tbs. granulated garlic
? tsp. paprika
? tsp. red pepper flakes
? Tbs. cilantro
1/8 tsp. black pepper
1/8 tsp. cumin
1/8 tsp. oregano
1/8 tsp. coriander
pinch tsp. allspice
pinch tsp. ground cloves

In a zip-lock bag combine all ingredients but the fish, close bag and shake to mix. Place fish into bag and shake well to coat. Heat and oil a Dutch oven and cook snapper until white and flakey. Remove and add more oil and cook salmon until flakey. Add snapper and break up into bite sized pieces. Serve in steamed fresh corn tortillas (2 per taco) add salsa, lime, and finely shredded cabbage. Enjoy! Serves 8

I bake my salmon with lawry's seasoning salt, black pepper and minced onions and garlic. When it is almost done I put BBQ sauce mixed with Jamaican Jerk Seasoning and a pinch of sugar and browning sauce.
