Question: Turkish Delight
Traditional Armenian (and Turkish) Christmas treat. In Armenia they usually leave it white while in Turkey they more often add the food coloring. Also called Lookoom.

3 cups granulated sugar
1-1/2 cups water
3 tablespoons white corn syrup
3 envelopes unflavored gelatin
juice of 1 lemon
3/4 cup cornstarch
1 tablespoon of rose water (or vanilla)
3/4 cup coarsely chopped pistachio nuts
powdered sugar
red or green food coloring (optional)

Combine granulated sugar with water and corn syrup in a heavy saucepan and boil until it reaches 240 F on a candy thermometer or soft ball stage. Keep hot. In a small bowl, soften the geletin in the lemon juice. Set aside. In another small bowl, dissolve the cornstarch in 1/2 cup of cold water, the pour it into the hot syrup. Stir gently and simmer slowly until very thick. Remove from heat, add gelatin and lemon juice and stir until gelatin dissolves. Stir in rose water or vanilla, nuts and 2 to 3 drops food coloring if desired. Sprinkle a generous layer of powdered sugar in an 8-inch sqare pan. Pour in mixture and let set in a cool dry place (the refrigerator is too humid) for 3 or 4 hours or until set. Sprinkle with another layer of powdered sugar and cut into 1-inch squares. Dredge each square in powdered sugar. Store in an airtight container.

Turkish Delight

1/3 cup boiling water
2 cups sugar
4 tablespoons orange extract or lemon extract or raspberry extract
1/4 cup pistachio nuts, chopped
1 cup confectioners' sugar
food coloring (Use appropriate color to match flavor.)

Soften gelatine in cold water.
Add sugar to boiling water.
Bring to boil.
Stir in softened gelatine.
Simmer, uncovered, 20 minutes.
Add flavoring and coloring.
Pour into ungreased, 8-inch square pan.
Add nuts.
Stir gently.
Chill.
When firm, invert onto cutting board.
Cut into 1 1/2 inch cubes.
Roll in confectioners' sugar.
Store in a jar at room temperature.

TURKISH DELIGHT

Yield: 1 servings

2 c Sugar
2 tb Cornstarch
1 c Water
1/2 ts Cream of tartar
1 tb Flavoring *
Food coloring **
1/2 c Toasted nuts, chopped ***
Confectioners' sugar

* Flavorings: rose, mastic, strawberry, orange or
lemon. ** Food coloring: red, yellow, green or orange
(depending on flavoring used) *** Nuts: almonds or
pistachios

Dissolve sugar and cornstarch in water. Add cream of
tartar. Boil to 220 degrees F. Cover pot the last 5
minutes. Add flavor and food color. Add nuts.

Pour into oiled shallow pan. When cool, cut into
squares and roll each piece in sifted powdered sugar.
Store in plastic bag.

Turkish Delight

1 lime
200 ml commercial cranberry juice
4 teaspoons rose water
1 cup crushed ice

Juice the lime, then place the juice with the rest of the ingredients in a blender and blend until smooth.
*Looksgood served in a Turkish tea glass.
