Hey, I'm from the south and here is how we cook green: you have to wash them, cut them up, and about 3 times as much as you think you might need because once they are cooked, they shrink. Chopped onion, ALWAYS, or green onion. Put it all in the crock with your seasoning meat. Add a teaspoon of sugar (takes out the bitterness) and if I were you, I'd chop up the meat in bite size pieces. If it's pork, add only 1/2 tea of salt. Now in a crock, the water stays without evaporating. Also, as greens cook, their juices increase, so you only need say 1/2 cup of water (which makes what we call "pot liquor"). Season as you like, pepper. Cook those suckers until they're tender, including the meat. Might take a 2-3 hours. Start on high for an hour, then turn it down to low. You really can hardly go wrong with greens. If they're not spicey enough for you, you can always add to it. I always put in about one tablespoon of margarine/butter also. Goodluck.....godloveya

Vegetables are added during the last hour of cooking. Use beef broth in place of water to add flavour (about 2 cups...enough to cover the meat). With beef adding some bottled chili sauce (about 3 tablespoons) adds a nice flavour as well.

Use a 1/2 cup of beef broth, Chopped onions, 2-3 dashes hot sauce, and some rep pepper flakes. Cook on low for at least 4 hours. The meat needs at least that amont of time to cook. Make some corn bread to soak up pot liquor.

Green what?
