Salads (assemble the vegetables & dressing at lunch time; I bring a small container of dressing and add it when it's time to eat) - the veggie part is easy with bagged salad & ready-chopped kiddie veggies & serving tupperware.
Cheese & crackers or cheese & apples - this can be very nutritious! Also a good main dish for lunch - fresh mozarella, basil & sliced tomatoes.
Apple slices to dip in almond butter (drizzle lemon juice on the apple slices to keep them from browning).
Whole-wheat bagel with peanut butter, honey & wheat germ. You can spread the PB right on a frozen bagel and it will thaw in time for lunch.
Wraps! Roll up leftover chicken salad & lettuce or tuna salad or provolone & tomatoes...

(Sorry if some of these recipes sound girly, they're what I take to lunch because I don't eat sandwiches, either...)

pasta salad-

well you can make bacon in the morning and he can have a cold blt its really good
You can also paack chips and salsa or pita chips and hummus

bagels with cream cheese, chicken salad sandwiches, pb&j or pb and honey, fruit salad, green salad, leftovers, basically anything left in your fridge :)
