Try not to boil your lobster tails to long

BAKED LOBSTER TAILS

3 med. lobster tails
2 tsp. parsley
Salt to taste
Pepper to taste, optional
3 tbsp. olive oil
Juice of 1 med. lemon
1 c. water

Split lobster tails in half lengthwise. Remove sharp edges. Sprinkle each with parsley and salt and pepper (if desired). Pour olive oil and lemon juice on each tail.
Pour water on bottom of a shallow 7 x 11 inch baking pan. Place lobster tails in pan. Bake in a preheated oven at 375 degrees for 25 minutes or until tender.

Serves 3.

4 (6 oz.) lobster tails, thawed
1 egg
1 c. bread crumbs
Oil

SAUCE:

1/4 c. honey
1 tbsp. Dijon mustard

1. Remove lobster tails from their shells.
2. Heat oil in a frying pan, moderate temperature.

3. Dip tails in egg then bread crumbs and fry until golden brown. Drain on paper towel.

4. Mix together honey and mustard. Spoon over the tails.

1 lg. lobster tail (frozen) tail only
1/4 c. white table wine
1 tsp. butter
Old Bay (sprinkle)

Thaw lobster, cut shell and pull out about 1/4 inch of the meat. Lay on top. Season with wine, butter, and Old Bay. Put under broiler for 12 to 20 minutes. Careful not to broil too long

LOBSTER SUPREME

2-3 pkg. frozen lobster tails (2-3 tails per pkg.)
1 sm. pkg. frozen shrimp
1/2 c. sliced celery
1/3 c. sliced scallions
2-4 tbsp. butter
1/3 c. shredded parsley
2 cans frozen shrimp soup concentrate
1 sm. can sliced water chestnuts with liquid
2 c. grated longhorn cheese
1 jigger sherry
Paprika

Boil lobster and shrimp until pink. (For lobster: 10-20 minutes, depending on size. For shrimp: Boil last 3-4 minutes. Do not overcook.)
Saute celery and onion in butter. Cut shrimp and lobster into pieces and add to celery and onion. Cook slowly several minutes. Add shredded parsley

You're boiling them too long. Boiling just the tail, in-shell, takes maybe 5 minutes. It's odd though that you could get just the tails, uncooked.

Tails don't take nearly as long as the live whole lobster. 15 minutes tops.

I find the best way is to put butter in the shell and cook them shell side down on the barbecue...YUM

Us this only as a guide to cooking lobster tails, not as a “must-do.” When your lobster tails are opaque (not translucent) and firm to the touch, they are likely done. You could also consider using a cooking thermometer to verify.

Good luck cooking lobster tails! May they be delicious and not rubbery! Of course, be aware, that frozen lobster tails are likely to be a bit more rubbery than fresh lobster – but they can still be mighty good!

Broil, grill. Slit the top shell with kitchen scissors down to the fin. Then with a knife, butterfly the meat and split the tail open. Melt 1 stick of butter, add a teaspoon of garlic and about a tablespoon of dried parsley, and a little salt and pepper. Put a bit of the butter mixture in a separate bowl. Brush the lobster meat with the above mixture. Broil or grill for no more than 7 minutes. On the grill, you may want to put down a piece of aluminum foil first and close the lid. Set the timer for 3 minutes and check them. Don't overcook. If they are small, it won't take 7 minutes. Warm the remaining butter mixture and serve with the tails so you can dip your bites into the melted butter. You can use separate little containers for each tail. This is enough for two tails.
