Tyr this for something super easy. Get some refrigerated cookie dough and then roll it out....then just use cookie cutters :)

Cherry Chocolate Kisses Cookie Recipe
1 cup powdered sugar
1 cup (2 sticks) butter, room temperature
2 teaspoons maraschino cherry juice
1/2 teaspoon almond extract
Red food coloring, just a few drops
2 1/4 cups flour
1/2 teaspoon salt
1/2 cup maraschino cherries, drained and chopped
48 chocolate kisses, unwrapped
Preheat oven to 350°F.
In large bowl, combine powdered sugar, butter, cherry juice, almond extract and food coloring; blend well. Lightly spoon flour into measuring cup; level off. Stir in flour and salt. Add cherries and mix well.
Form dough into 1-inch balls. Place 2 inches apart on ungreased cookie sheets. Bake in preheated oven 8 to 10 minutes or until lightly brown around edges. Immediately top each cookie with a chocolate kiss. Remove from cookie sheets and cool. Makes 48 cookies.
Eggnog Santa Cut-Outs
3/4 c. sugar
3/4 c. butter, softened
1/3 c. eggnog
1 egg
1 t. vanilla extract
2 1/2 c. flour
1/2 t. nutmeg
1/4 t. salt
1 t. baking powder
In a large bowl, combine sugar and butter. Beat until mixture is creamy, about 2 minutes.
Add 1/3 c. eggnog, egg and vanilla; continue beating until well combined. Reduce the speed to low; add flour, baking powder, nutmeg and salt. Beat until dough is well mixed.
Divide the dough in half and wrap each in plastic wrap. Refrigerate until it is firm, at least one hour.
Preheat oven to 375°. Roll out dough, one half at a time on a lightly floured work surface to a ?-inch thickness. Cut out the cookies with a Santa shape or your favorite holiday cutter. Place the cookies 2 inches apart on ungreased baking sheets.
Bake the Santa cookies for 8 to 10 minutes or until the edges are lightly browned. Remove from the oven and cool completely.
Frost with your favorite icing or decorate with sprinkles and candies.

here is an easy one and works very well to make ginger bread men as well .
3 &1/2 c all purpose flour,1&1/2 tsp ground ginger,1&1/2 ground cinnamon,1/4 tsp salt,1/2 c white sugar,1/2 c shortening,1 egg,1 c molasses,1 tsp baking soda,1&1/2 tsp warm water 1/4 c raisins for decorating
In large bowl cream shortening ,sugar,eggs and warmed molasses. Dissolve baking soda in warm water and add to creamed mixture . beat untill smooth . Mix in flour ,spices and salt untill well blended . cover in wax paper and chill for 24 hours. Preheat oven to 350 degrees. grease cookie sheets . roll out dough to a thickness of 1/4 inch on a floured surface. cut out gingerbread men using cookie cutters and place 2 inches apart on cookie sheets. Use raisins to make eyes,noces and buttons . Bake 10 to 12 min in preheated oven ,or untill firm . let cool on wire racks.
This recipe couldn't be simplier and it's fool proof. My kids can roll out the dough. No matter how much flour they add, they turn out great. I like to add almond extract for extra flavour.
