A question about cake icing?!


Question: I want to know how do I make that white creamy icing for chocolate sponge cake roll?

You know you bake the chocaolate sponge cake and cut it in to a thin layer then spread this icing on it and roll over.

Some people use whipped cream where you just whip up one cup of heavy whipping cream and add 1-2 tablespoon of icing sugar or they use swiss meringue buttercream:

Swiss meringue buttercream holds up at room temperature for quite a while, but you have to be sure to cook the sugar to 160 degrees and pour it into the whipped egg whites to kill any salmonella lurking in there.

Cream Filling

1/2 c sugar
1/3 c flour
1/2 teas. salt
2 c milk
2 slightly beaten eggs
1 teas. vanilla

Mix sugar, flour, salt; slowly stir in milk. Cook and stir over medium heat till mixture boils and thickens; cook 2 minutes longer. Stir a little of hot mixture into eggs; stir into remaining hot mixture. Stirring constantly, bring just to boiling. Add vanilla; cool. makes 2 1/3 cups.

You can also use whipped cream.

Mix ingredients in a small mixing bowl until creamy.

1 (8 ounce) package cream cheese, softened
1/4 cup butter
1 teaspoon vanilla extract
1 cup confectioners' sugar

let cake cool while rolled up in a towel, unroll and spread a nice even layer covering entire side. Re-roll with icing inside.
