Question: My boyfriend is coming home for Christmas (he's in the Navy), and Derby Pie is his favorite food at chow. I need a decent recipe to make it. Thanks!

I have 2 types of derby pie for u.

1. Run For The Roses Pie III

PREP TIME 30 Min
COOK TIME 1 Hr
READY IN 1 Hr 30 Min

INGREDIENTS

* 1/2 cup butter, melted
* 3/4 cup white sugar
* 1/2 cup all-purpose flour
* 2 eggs
* 1 tablespoon bourbon
* 3/4 cup semisweet chocolate chips
* 1 cup chopped walnuts
* 1 prepared 8 inch pie crust

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C.) Spread chocolate chips and nuts in bottom of pie shell.
2. In a mixing bowl, cream butter or margarine and sugar together. Mix in flour. Beat the eggs slightly, and mix into the creamed mixture. Stir in bourbon. Pour filling into pie shell (over chips and nuts).
3. Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes.

COOK TIME 1 Hr
READY IN 1 Hr 15 Min

INGREDIENTS

* 1 cup white corn syrup
* 1 cup packed brown sugar
* 1/3 teaspoon salt
* 1/3 cup butter, melted
* 3 eggs
* 1 cup chopped pecans
* 1 recipe pastry for a 9 inch single crust pie

DIRECTIONS

1. Combine syrup, sugar, salt, and melted butter or margarine. Slightly beat the eggs, and add to sugar mixture. Beat well, and pour into uncooked pie shell. Sprinkle pecans on top.
2. Bake at 350 degrees F (175 degrees C) for 50 to 60 minutes.

1 cup Sugar
1 cup Light corn syrup
4 Eggs
1/2 cup butter -- melted
1 cup Chopped pecans or walnuts
1 cup Chocolate chips
1 teaspoon Vanilla
2 tablespoons Bourbon (opt.)

Directions:
Preheat oven to 350 F.

Combine sugar, corn syrup and eggs in mixing bowl. Beat at low speed until well blended. Stir in remaining ingredients and pour into a 9" unbaked pie shell. Bake 45-50 minutes or until set.

Single pie crust, which you can make from your very own recipe. If you're too rushed for that, we recommend those wonderful Pillsbury crusts that you merely have to put in the pie pan and crimp! Find them in the refrigerated biscuit section of the supermarket.

Filling:

1/2 cup butter, melted and cooled

2 eggs

1 cup sugar

1/2 cup all-purpose flour

1 cup semi-sweet chocolate chips

1 1/2 cups chopped pecans

2 tablespoons Kentucky Bourbon

Beat eggs with cooled butter. Add flour & sugar. Beat until mixed well. Stir in pecans, chocolate & bourbon. Pour mixture into pie shell. Bake at 350° for about 30 minutes, or until set. Serve with fresh whipped cream or vanilla ice cream, or both!

Kentucky Pie
The "Derby Pie ?" is a trademarked name with a secret patented recipe. Several have tried to come close to the original recipe made at the Melrose Inn by George Kern. The pie is still made and sold by Kerns Kitchens. This is a good attempt, but probably not as good as the original.

"Derby Pie" is a registered trademark for a food company in Louisville, KY--they protect it very aggressively--but, it is essentially Pecan Pie with chocolate chips and a couple of tablespoons of Bourbon added. There are two schools of thought on "Derby Pie"--those who melt the chocolate into the filling and those who leave the chocolate in chips. Both versions taste great. For me, the difference is that the pie with the melted chocolate is the better of the two when served cold; the pie with the chocolate chips is the better of the two when served warm (when the chips are melted) and with ice cream.

Now, you've made me crave "Derby Pie."

Kentucky Derby Pie

1/2 c. flour
1 c. sugar
1/4 lb. butter
16 oz. chocolate chips
2 eggs, slightly beaten
3/4 c. chopped pecans
1 tsp. vanilla
9 inch unbaked pie shell

Preheat oven to 325 degrees. Mix sugar and flour together and then blend in butter. Stir in the chocolate chips, eggs, pecans, and vanilla. Pour into pie shell and bake for 1 hour
