Whenever you try to freeze a salad made with Miracle Whip or mayo, the dressing tends to separate. And yes, sometimes the potatoes turn an icky grayish or blackish color.

Your best bet is to share some of the left-overs with a friend or neighbor and creatively use up the remaining potato salad.

Potato Salad with Smoked Sausage

3 C. already-prepared potato salad
1/4 tsp. celery seed
1 tsp. yellow mustard
1 Tbsp. cooking oil
1 C. sliced smoked sausage
3 hard-boiled eggs, peeled and sliced

Mix the potato salad, celery seed, and mustard. Set aside.

Heat the oil in a skillet and sautee the smoked sausage until just heated through. Drain thoroughly.

Add the heated sausage to the potato salad mixture, and garnish with hard-boiled egg slices. Serve with garlic bread and fruit for a complete meal.

No, oyu cannot freeze potato salad. Potatoes are freezable, but mayo is not. Plus, when you defrost it, it will be watery and gross. You can refrigarate it though. Just remeber, it will only last 3 to 4 days in the fridge. If you have too much, offer som to neighbors, friends, family, etc. Also, you can eat it for dinner and / or take it for lunch at work.

No, you can't freeze potato salad because of the mayo.

I wouldn't freeze it. It would come out looking a little different than when it went in!

I would suggest that if you have an overload of it left.....put it in some small bowls or storage containers and give it away to everyone you know! That's what I do when I have too much food from a party or whatever...people usually take it!
