Cheesecake recipe modification?!
Answers: I have a recipe for a cheesecake which calls for an 8" springform pan. I can only find 9" springform pans and I was wondering if I'd need to make any alterations to the cooking times or anything. The original recipe calls for 45 mins of baking at 325 degrees F. Would an extra inch to the diameter need a shorter baking time and if so, by how much?
I don't believe you would have any problems using the 9" springform pan...and I don't believe it needs any real alteration to the cooking time.
The biggest change, obviously, is that your cheesecake won't be as thick...due to the change in the pan size.
Watch the cheesecake. When the top just starts to split, it is done. IF the top becomes brown and flaked, you CAN remove that. (If you are covering it with fruit, no one will ever know)
All of my cheesecake recipes call for a 8" pan and all I have is 9" also.
Just keep an eye on the cheesecake when it nears the end of the baking time. (around 40 minutes)...you an also insert a toothpick in it, if it comes out clean...it is done.
I usually just shake it gentle, if it doesn't wiggle like jello, I remove it.
I think that it does because the cheesecake will be thinner. I would check it at 30 min. and just watch and see how long it takes. You could also search online for a 9" recipe and look at the baking time.
I do not think that an extra inch with a cheesecake would decrease the cooking time - but if I did it would only be by about 5 minutes.
