Define soft peaks and stiff peaks (when beating yolks or cream)?!

soft peaks will like flop over and move if you shook the bowl a little. stiff peaks wont flop or move...


stiff peaks- beat longer

Pointy is stiff...soft is more rounded.

Sorry i don't have pics, but soft peaks will bend over at the top - stiff won't.

Soft peaks roll downward when you leave them to set. Stiff peaks stick straight up when they set.

pointed is like a spear point straight up....soft goes up then curls over like an ocean wave crashing....how's that for graphic detail???

soft peakes are when you have hat little curl on the beater and stiff is when you have a straight point

You won't get peaks at all when you whip egg yolks, only white and cream, of course.

When you lift your beaters straight up and out of the mixture, the tip of the peak will flop over a little if it is a soft peak. If it is a stiff peak it will stick straight up and come to a point.
