Does anyone know of a sauce i could serve or drizzle over pineaplle upside down cake?!

Really, because of the caramelized syrup on the cake already, the traditional thing to put on the cake is a dollop of whipped cream. If you want some added zing, you could add a TBSP of light rum to the cream after whipping.

If you really want MORE sugar sauce, I would stick with a burnt sugar syrup, maybe throw a couple cherries into it, but I mean just a COUPLE.

my mom always put cherries on her pineapple upside down cake. a little cherry sauce would be fine, but i think the sauce made from all the brown sugar and butter is delicious. if anything, i would make extra brown sugar sauce.

make a fruit juice "gravy"
boil whatever flavor juice you want and then add butter, sugar and cornstarch, continue boiling and stirring constantly for a minute then simmer
drizzle over cake

a cheery sauce?

just make a light sauce with the remains of the fruit juice.
It will be quite sweet anyway so nothing too OTT

I am confused about why you think you need a sauce for your pinapple upside down cake. If you have made your upside down cake in the traditional way, it will already have plenty of moisture and "sauce."

If you really think you need a sauce, melt 1/4 cup butter, add 1/4 cup brown sugar and perhaps some of the left over pineapple juice. Cook it for a couple of minutes while stirring constantly. If you have added pineapple juice you may need to cook it a little longer to reduce the liquid to get the right consistency.

why not just a bit of cream, or ice cream is nice if the dessert is served hot.

vanilla sauce

INGREDIENTS:
1/2 cup sugar
1 tablespoon cornstarch
1 cup boiling water
2 tablespoons butter
1 teaspoon vanilla extract
dash salt
PREPARATION:
In small saucepan combine sugar and cornstarch. Stir in 1 cup boiling water. Simmer, stirring constantly, for 5 minutes. Stir in 2 tablespoons butter, vanilla extract and salt; blend well. Serve vanilla sauce warm with your favorite pudding or other dessert.
