Very Simple ... very tasty!

One small box of peach Jello
One can of peach slices packed in pear juice. (Use the pear juice as part of the liquid when preparing the jello.
1 to 3 cups of raspberries (the more the better... I need to watch my budget... if you have berries available locally you can use the upper limit.

Make the Jello. Allow to cool 10 minutes.
Add peaches and stir well
Add berries with as little stirring as possible you want to keep the berries whole.

Serve with Angel cake and real whipped cream for dessert.

Serve with yogurt or cottage cheese for a lovely lunch.

Get some fresh raspberries, a carton of whipping cream, and a packet of pre-made meringue nests. Whip the cream. Crumble the meringue nests into the cream. Stir through the raspberries gently so they keep their shape.

I'm told this is called 'Eton Mess'. I don't know if that's actually it's name, but it tastes awesome.

As long as they are fresh raspberries, this recipe will work. In fact, my nephew specifically requested that I make it this past summer when the fresh berries were available locally.

It's Raspberry (or Strawberry) Roll-Up:
Make a jelly roll cake (Betty Crocker has a good recipe) and after it's cool (and been rolled up in a well powder sugared towel), unroll it and spread the top side with Cool Whip or Dream Whip. Then add a layer of fresh berries. Then roll it up again. Add more cool whip to the top and decorate with a few more berries. Keep refrigerated until serving.

You can make the jelly roll cake early in the day. But try and assemble it with the cool whip and berries shortly before serving; otherwise, it gets soggy (still good the next day, just not as good as fresh!).

Hope you enjoy! (To make with strawberries, cut them in slices. No need to do anything to the raspberries other than to wash them!)

Raspberry Parfait

6 tablespoons raspberry jam
2 tablespoons water
1 (10-ounce) pound cake
3/4 cups heavy cream
2 tablespoons sugar

In a small bowl, whisk together jam and water, set aside.

Cut the pound cake into thin slices about 1/8-inch thick. Take one of the wine glasses that you will use to serve the dessert in and cut out a circle from each slice of cake by pressing the rim of the glass into the cake. When you're done, wash the glass.
In a large mixing bowl, whip the heavy cream with a whisk or electric mixer until it just begins to hold soft peaks when you pull the beaters out. Sprinkle in the sugar and continue beating to soft peaks.

Drop a couple of large spoonfuls of the cream into 2 wine glasses then press in a cake round followed by a thin layer of raspberry sauce. Repeat until you've almost filled the glass. End with a layer of cake, then cream and then drizzled berry sauce over the top.

RASPBERRY&ORANGE SYRUP CAKE(this is yum)
250g soft,cubed butter
1cup caster sugar
4eggs,lightly beaten
1.1/2cup self raising flour
1/2cup almond meal
125graspberries
grated rind of2oranges
ORANGE SYRUP
juice of2oranges
1/2cup orange marmalade
1/2cup sugar
METHOD
Heat oven180C(350F)
1.beat butter&sugar till light&creamy.Add in eggs(1@time)
until well incorperated.
2.Fold in flour&almond meal,mix till smooth.Add berries&rind.Mix well
3.Line&grease a22cm,tin.Bake for1hr.till golden.
4.SYRUP:combine all ingredients in pan&heat till sugar is dissolved.Bring to boil,reduce heat&simmer5-6mins,till thick.
5.Drizzle over warm cake&allow to cool slightly in tin.
Serve warm or cold with a dollop,thick cream&extra berries for garnish.
It truely is a nice cake..try it..enjoy.
