Many top grilling recipes say to allow the steaks to stand at 20-30 minutes before grilling, and recommend grilling steaks over a direct-medium fire (350°F to 375°F) on a covered grill.

It's also recommended to let the steaks rest for 5 minutes after grilling to keep them nice and juicy.

The trick to a good steak is to get the heat right up there - 500 degrees. Once it's hot, sear each side of the steak so that the juices have nowhere to go but stay inside the meat.
