I'm not a great cook let alone a chef. But, I am thinking the temperature in your oven is uneven -- hotter on one side than the other. Or, could it be that your stove is not balanced.

Heating as was mentioned before could be the issue, if your oven doesn't have an even heating flow you may have to rotate the cake over the course of the baking so it receives even heat. Otherwise it may have been that you didn't mix it well enough, in which case the ingredients may not have been evenly distributed. Try mixing a little longer and then rotating it while its baking and see if that works. Good luck.

I say it could also be the mix. I baked cupcakes today with Betty Crocker. They raised a little and then went a little flat in the middle...I had left them in the oven to cool after I shut the oven off and left the oven door open...I was eating lunch at the time. I did make sure to do the toothpick test and they were done too.

First, make sure you sift the dry ingredient together before adding the wet to them. You can also tap the pan on the counter<NOT ANGEL FOOD>. This gets rid of some of the air that may be trapped in the batter, and expand when cooked. Rarely will a cake come out perfectly level. Also, the evenness of the oven heat can effect the cake.
