How can I avoid flat cookies?!


Question: I made chocolate chip cookies today and they tasted just fine but they were very flat. I put the dough in the refrigerator before baking but they still came out flat, any ideas of how to make them less flat?

you should handle the dough less,usually overworking,results in falling.

edit* the amount of fats and liquid you use determine how flat your cookies are. Since butter melts at low temperature, they will spread your cookie. Shortening & margarine are stable and will help maintain your cookie shape. Liquids can either cause cookies to puff up or spread.

If you use a margarine that is high in oil it will cause your cookies to be flat. Try using real butter. That should solve your problem.

Was your baking powder/soda old or bad?

Try freezing them.

Maybe your dough was too runny and you need to alter the recipe and add more flour.

Roll them in balls before baking

Also if you mixed the dough too much after adding the dry ingredients can cause your cookies to fall. Overworking the dough. And it helps too by sticking it in the fridge for a bit to stiffen up some before baking. If your dough is warm & goes into a hot oven can equal a flat cookie.
