Ive been told that lard (renderd pork fat) tallow (renderd beef fat)butter and margarine are technically considered types of shortening.beacuse of their semi solid state.
But as a cook I generally regaurd shortening to be vegatable oil based .Crisco is the best .one can use margarine as a replacement but I make sure it is made from veg.oil and not a mixture of both.butter is a good substitute esp.in baking.
unless a recipe specifically calls for lard or tallow ,stick with a vegetable oil based shortening or margarine/butter.
