Easy & Delicious Crockpot Beef Roast
1 chuck or rump Beef Roast (sized for your crockpot)
1/2 Cup of Water
1 Packet of Ranch Dressing Mix
1 Packet of Italian Dressing Mix
1 Packet of Brown Gravy Mix
Put roast in crockpot, pour water around the base. Sprinkle all 3 dry seasoning packets over roast. Cover and cook for 6-7 hours on low. Remove roast to cutting board and let sit 15 minutes; slice thinly across the grain . It makes great tasting gravy too, that tastes like you browned it and simmered it all day on the stove.

I do this by eye, but I can get my 6 year old picky eater to eat it. Take the pot roast and season liberally with salt and pepper. Then brown it quickly in a sautee pan with a little olive oil. You want the heat to be really high.
Then I put it in the crock pot with 1 large sliced onion, a few stalks of sliced celery, 2 - 3 cloves of diced garlic, a small bag of baby carrots. I top this with 1 c. of red wine and cover the pot roast with stock. I guess beef would be best, but I can't tell the difference when I use chicken honestly. Then I pop in 1 bay leaf and a sprig of fresh thyme. Let this cook on low for about 6 hours. Then I add about 2 tbsp. of S & P and a few cubed potatoes. Let this cook for about another 2 hours.
Put a two to three pound pork shoulder roast in the pot with cookies barbecue original covering the meat. Add 4 tablespoons of vinegar or lemon juice or half a lemon. Set on low for 24 hrs. and then add black pepper to taste.
