The milk solids in butter burn; clarified butter does not burn because it has had all its milk solids removed.

You shouldn't be greasing a pan to make cookies... use parchment paper instead. It's reusable, recyclable, relatively inexpensive (it comes in rolls at your grocery store) and easier!
