Baked/Broiled Salmon and a Side?!


Question: i want to make salmon for dinner tonite - i wanted to know a simple recipe that i can use ( i dont have a grill - only broiler/oven) and also what's a good side to go with baked salmon? ( i have rice, different spaggetti and frozen veggies)

frozen veggies? what kind. asparagus goes perfect with salmon. roasted aparagus with kosher salt, fresh ground pepper, olive oil, and oregano. roast in oven 12-14 min, should still be slightly crisp, and relatively bright green when done. as for salmon, broiling anf baking temps are good. there is an excellent recipe by Robin Miller on foodtv.com. it is honey mustard salmon. i cant think of ingriedients offhand, but it is DELIOUS. we eat it once a week, and haven't wanted any other recipe since

Most vegetables are good with salmon but especially the dark greens. A very simple salmon recipe is just to wrap it in foil having topped it with lemon juice, salt, pepper, and garlic and then broil it until done. The time will depend on the thickness of the cut you have. Another option would be to season with dill, though personally I prefer the lemon and garlic.

I made scalloped potatoes over the weekend. I forgot how good they are. Couscous is easy and good, too. Broiled tomatoes would be good, too...

My favorite salmon dish is baking salmon with lemon pepper seasoning over a small bit of water (keeps it moist), and when the salmon is done, placing it on top of a caesar salad. The only side you need for this is bread and butter.

I love poached salmon. Can be served hot or cold and it's really easy. All you need is salted boiling water in a pot big enough to fit the salmon. Check on the net for recipes. I serve it hot with a caper tartar sauce.
Serve with wild rice or rosemary roasted potatos.

The easiest Salmon recipe ever, and men love it, and there are no leftovers, and if you want seconds you better get it quick!!!!

In an oven proof well buttered casserole dish, put the salmon.
Mix a small bottle sugar free maple sirup with 1 tablespoon Liquid Smoke (gives a smoky, hickory smoked flavor).
Pour over the salmon.
Bake in a HOT pre-heated oven, 500 degrees, for about 15 minutes (depending on thickness of salmon) until it starts to flake easily and the flakes are transparent.
That's all there is to it.
Every time I make this, it is the most popular dish on the buffet!!
Easy accompaniment- rice and a veggie. I like to make a seasoned rice (from a mix) and toss with a handful of still frozen peas. The heat from the rice will cook the peas until crisp tender but still firm and sweet.
