What are some recipes that would call for fat back?!
Collard Greens
Turnip Greens
Peas of all kinds (black- eyed, purple hull peas, field peas, etc)
Beans as well...(pinto, butterbeans, baby lima beans, green beans, etc)
You can also use them in baked beans in place of bacon.

Boiled orka
Almost any recipe that uses fat, you can use the fatback in. Just fry a little bit in a skillet to render the fat for use. Onions sauted in fatback are great.

Check out a southern recipe book from the library... you'll be surprised how many use fat back.
Is it in leaf or block form? It is very usefull in baking pie crusts, tamales, etc.
