Who has heard of Gypsy Tart?!
We have a 'fun' day every Friday and we bring in food according to the theme of the day. ie Purple - every food has to be purple. Healthy, pesto etc.
In honor of a brit backpacker we have working with us, we are having a 'British Fun Day'. I'm going to be making Gypsy Tart on her reccomendation.
I have a recipe, but I was wondering whether you would have any tips that I should keep in account. Since I've never even heard of this tart.

Actually, I have heard of it and in fact was reading about it not long ago. I have a recipe from Gary Rhodes who remembers it from his school days in England.
It is just a pastry crust, evaporated milk and brown sugar.
You blind bake the crust for 15 to 20 minutes at 400 degrees F. Blend the milk and sugar in a food processor or blender until creamy, pour the mixture into your cooled crustand bake for another 10 minutes.
According to Rhodes the tart won't set completely until it has been cooled and you are supposed to serve it cold.
