I need a good onion ring batter.?!

Question: Either a beer batter or regular...I use a pancake mix (the add water only kind), and add either, depending on taste, plus some garlic powder, pepper & seasoned salt. Great for any batter frying, especially fish filets.

1/2 cup of corn starch
1/2 cup of flour
1 tbsp of fine corn meal
1/2 tsp salt
cold beer
Slice your onions and put in a large bowl and place in the refrigerator until ready.
Mix your dry ingredients with a fork in a medium bowl then "slowly" add your beer until you get the consistency of heavy cream.
Drain water from onions and shake in a bag of flour-dip onions in batter then fry at 350 until golden.
My nephew asks for this every time!!!!

This will sound way crazy, but I use pancake mix and then I add some Tony's Cajun seasoning. Then I fry it up and then add some more Tony's depending on how spicy I want it.

When you are ready to fry up your onion rings dip them in the dry mix first and shake off extra flour on the onion ring. Next dip the onion ring into the batter, let excess drip off then lower it into your hot oil.
Try not to put to many in at a time. It will bring temperature down in the oil.
