Question: for something cheap and simple, but not so simple it's boring, for me to have for dinner tonight?
I've only just moved out and it's quite exciting knowing that you have kitchen that you can use and abuse however you want! lol

This is a cheap recipe that I make often for my husband's foot ball parties. I like it and so does my daughter. It makes for more than one person, but it freezes well for later dishes.

Pick any type of meat you like. You can use ground beef, but I prefer sausage. You don't need much, maybe a 1/2 lb. Sautee up the meat. If you use sausage you don't need much seasoning, if you use ground beef you will need to season it. Then take the meat out of the pan add a little olive oil and any veggies you like. Generally I use peppers onions and mushrooms. If you get them from the salad bar it's more expensive, but you won't have waste. And they are already cut up. Cook them until the veggies are tender. Then add the meat back to the pan with a can of diced tomatoes. Taste for seasoning and let it simmer for about 15 minutes. Then hollow out a crusty roll, cut the roll closer to the top than the bottom. Fill with your meat mixture and top with a slice of mozz or provalone cheese. Put the top back on and bake at 350 for about 10 minutes. Oh, toast the hollowed out bread for about 5 minutes in the oven first. And to make it creamier add about 1 tbsp of ricotta under the cheese. I do it both ways.

if you're not ready to attend a blown out meal in front of the stove yet..
go for spagetti,, buy some ready made sauce in a jar, boil up the noodles, drain, and plop the sauce over and reheat..
get a long bread stick, slice, and spread butter, and sprinkle garlic powder on it, broil till browned, youve got garlic toast, and add a simple green salad.. some iced tea.. youve got a meal...

if i were you i would make myself pasta. your favourite pasta...not anyone else's pasta...and the thing is you can make it as simple or complex as you want to...and its all up to you.

invite some people over...they can help wash the dishes =)

Hearty Homemade Chicken Noodle Soup Express
From: Campbell's Kitchen
Prep/Cook: 20 minutes

Serves: 4



Ingredients:


2 cans (10 1/2 oz. each) Campbell's? Condensed Chicken Broth
1 cup water
Generous dash ground black pepper
1 medium carrot, sliced
1 stalk celery, sliced
1/2 lb. skinless, boneless chicken breast, cut-up
1/2 cup uncooked medium egg noodles



Directions:



MIX broth, water, black pepper, carrot, celery and chicken in saucepan. Heat to a boil.

STIR in noodles. Cook over medium heat 10 min. or until noodles are done.

TIP: Serve with tossed green salad, assorted Pepperidge Farm? crackers & cheese slices. Serve apple or pear slices for dessert.

Ramen... It's sounds so aweful but it's not. saute some onions, pork, mushrooms, cabbage and garlic with some butter. When you are done add 1 or 2 cups of water and some beef broth. Add the spices you like (cumin, pepper, and of course salt, msg if you like..lol) when the water comes to a boil add the ramen. Cover the pot for 3-5 minutes. THe steam will cook the ramen. Mix and eat.. Total cooking time is about 10-15 minutes. All the food is cheap and left over veges and meat can be used other times during the week in other dishes. I live in Korea and this is a great meal to eat. Spice it up alittle bit and try anything.

simple chicken

Ingredients
4 Chicken Breasts
1/4 Tsp. Cracked Black Pepper
1/4 Tsp. Sea Salt
1/4 Tsp. Thyme
1/4 Tsp. Rosemary
1/4 Cup Brown Sugar
4 Tbsp. Butter
Seasoning Bag

Directions
Inside seasoning bag, combine all dry spices with sugar and shake well. Add chicken breast, one at a time, and shake well until breasts are well seasoned. In a large frying pan melt butter and place chicken in pan on low heat. Fry on both sides until well browned and done.

spagettii bolognaise pasta is cheap but good for you as it contains wheat a small amount of mince meat with it is easy to prepare quick and not expensive x

Pasta is always good as it's so versatile, and the simplest sauce can be ravishing and easy. I love basil, it's ecstatically heady, so when I want to indulge myself, I throw some pesto into a pot of fusilli, and a decent sized spoon or so of creme fraiche to give a creamy texture. Consume with copious Chianti, and follow with panacotta.

If you're feeling adventurous, this is also easy: salmon in whisky and cream sauce.

Get a fillet or two of salmon, and score both sides with a knife. Coat with a teaspoon of Dijon mustard. Grind some peppercorns and press over both sides of the fillet to give a nice coating.

Heat a knob of butter in a pan till it's foaming hot (but not burning), then put the salmon in and fry over a medium heat for 3 minutes. Season to taste.

Turn fillets over, then put in a good tablespoon of scotch whisky (watch it doesn't catch fire, mine did once!), and turn up the heat till it boils away. Add a quarter pint of double cream, and keep boiling for about 2 minutes till it thickens up. Stir in some chopped chives (about 1 tablespoon). Plate up and garnish with some more chopped chives. That's it. Delicious. Will really impress that Special Person with your gastronomic abilities.

********QUICK AND EASY CHICKEN ALFREDO
2 chicken breast sliced
2 jars Alfredo sauce
2 c. mushrooms
1 lb. fettuccine or any pasta
2 tsp. butter
Sauté chicken and mushrooms in butter until lightly brown. Pour in Alfredo sauce over chicken and let simmer for about 5-7 minutes. Pour mixture over cooked fettuccine or pasta. Sprinkle with Parmesan cheese.

**********Hamburger patties Salisbury Steak

Bake pre made hamburger patties at 350 for 30 minutes or until done. I seasoned mine with garlic salt and pepper.

SALISBURY SAUCE:
1/4 c. catsup
2 tbsp. chili sauce
1 tsp. Worcestershire sauce
1/2 tsp. beef flavored gravy base
1/4 tsp. dried crushed basil
2/3 c. water
Combine all ingredients in a saucepan and simmer 15 minutes. Spoon over Salisbury Steaks.

Serve with rice or pasta. Family favorite!



********STUFFED BELL PEPPERS
5 or 6 green peppers, med. size
1 pkg. Stove Top dressing (your choice of flavor)
1 1/2 lbs. lean ground meat (turkey, veal or beef)
1 egg
Bread crumbs (plain or seasoned)
butter (sm. amount)
Cut peppers in halves; clean and remove seeds, then place in boiling water for about 5 minutes or softened. Place in baking pans and put aside. Brown ground meat. Remove excess fat if necessary.
Prepare Stove Top dressing and mix with brown meat. Beat egg and fold into mixture. Fill pepper halves, top with bread crumbs and a dab of butter on top. Fill bottom of baking pan or pans with a small amount of water. Bake in 350 degree oven for approximately 30 minutes (or until brown).
Peppers can be frozen and cooked later. Yield: Will fill 10 or 12 halves according to size of peppers. Leftovers can be placed in a casserole for another meal.

Try to make a Souffle, it normally goes wrong and you end up with a messy kitchen!!

What i used to make when i first moved out was pizza toast - normal cheese and toast but with laods of different toppers - ham and mushroom, achovies, peppers - tastes lush!!

I always make stuffed mushrooms if my boyf is out (like he is tongiht for football)

Large flat mushrooms, spread some garlic cream cheese on the bottom, add some chopped bacon, bit of chopped up tomato, cheese on top and sprinkle some breadcrumbs, in the over for 20 minutes and voila!!!
