What's a good veg to eat with chilli and cornbread?!


Question: Your veggies are in the chili :)
It's such a hardy meal especially with cornbread, you don't need anything else. That not withstanding, I agree with a veggie salad for those who care for some.
If not that perhaps some baked squash, a nice winter veggie to accompany a nice winter dinner.

A nice tossed salad is great with chilli!

Pepper mix
Greens
Black beans
Corn

Okra.

Tossed salad, green beans. Actually it's really a complete meal in and of itself and totally nutrionally sound by itself.

something dark green and leafy - collard greens, spinach, swiss chard

red roasted peppers and courgettes :)

Chili and corn bread is a meal unto itself.
But if you must!
A nice green salad with tomatos and shredded sharp cheddar on top.

Rice is great with chilie- but greens are best, especially now they sell them pre-washed and in a bag- Delicious fresh collard greens are seasoned with bacon or hog jowl. Rinse the greens several times before trimming and chopping.

2 pounds collard greens
6 to 8 thick slices partially cooked bacon or hog jowl
4 to 6 cups water
1/2 to 1 cup chopped onion
2 teaspoons salt
crushed red pepper
dash seasoned salt
1/2 teaspoon Cajun seasoning, optional
PREPARATION:
Wash collard greens in about 3 changes of water, until no sediment can be felt in bottom of sink or bowl, or used pre-washed greens. Cut out thicken stalks and any thick veins. Roll leaves and cut in 1/2-inch strips (chiffonade style) or chop coarsely Cook diced bacon or jowl to render some of the fat; discard fat or save for another use.
Bring water to a boil.

Add the chopped onion, cooked bacon or hog jowl, salt, peppers, and other seasonings, if used. Add greens to boiling water. Cover and simmer over medium-low heat for about 1 hour, or until greens are tender.
Serves 4 to 6.

There's a Sicilian salad we like: sliced tomato, thinly sliced onion, sliced oranges, a bit of olive oil, and chopped basil. Arrange neatly on a plate. Chili and cornbread is a big meal needs something light as an accompaniment.

I would put some corn or creamed corn into the cornbread, and put beans in your chili.

Otherwise, no vegetables are necessary.

I'd go with fruit for dessert if you have to add more fiber than that.

Baked Potatoe with butter and sour cream

A simple salad. Chili is a meal in itself, and cornbread is a great compliment. Stick with something light since chili is so filling.
