How do you make oven baked fries?!


Question: I usally cut potatos in to even strips and toss with olive oil, salt, pepper, rosemary, and paprika or what ever seasoning we are in the mood for then bake at 425 for about 25-30 min flipping halfway. the problem is when I flip they break apart even though they are brown on cooking side, do I need to turn up the temp or down or what. Please let me know your little tricks, my family loves mine but I am never quite happy with them

I am a former chef. I noticed that the other answers are not from former chefs. Ignore them. I, a former chef, will come to your aid and rescue as only a former chef can.

It seems to me that your heat isn't the problem. 425 sounds good for a nice crispy batch of fries. I would try a vegetable oil of any kind -- vegetable, corn, canola -- and use a little MORE of it. Then use a spatula to turn them. Go ahead and take them out of the oven and carefully slide a spatula under them to turn em over.

Thanks back at ya. Ummm it think that you should turn it down to like 375-400.

A low fat solution to the tasty oven baked french fry is to bake it at 375 degrees for 15-20 minutes.

i'd say down the heat a little

i cook mine at 375-400

To cut more fat from them I use a canola spray and shake them in a dry onion soup mix. I put them in for 20 to 25 minutes at 375*. Every oven is calibrated different so you will need to prick them with a fork when the timer goes off. From there you can determine how much more time you need.
I also like to use seasoning salt, garlic powder and some times onion powder.
