melt butter

Melt regular butter into a small dish. Add some season-all spice and a little garlic. You can also add some lemon pepper if you'd like. Pour a desirable amount over the fish before cooking. You can also add a little more right before it's done. Good luck...

very easy, flour, salt and pepper the tilapia and saute it in some nice olive oil. When its cooked, pull it out of the pan.

Then put some whole butter, garlic and green onions in the pan and saute that, squeeze some lemon juice into it, mix it up in the pan getting everything nice and saucy.

Pour over tilapia and let the party begin.

Tilapia Calypso
4 tilapia fillets, 6 oz. each
1 cups white onion, julienned
1 cups poblano chili pepper, julienned
3/4 cups red bell pepper, julienned
3 cloves garlic, minced
2 tablespoons olive oil
1 tablespoons butter
4 teaspoons jerk seasoning
4 tablespoons cilantro, chopped
4 orange slices, unpeeled

Saute′ onion, peppers and garlic in oil and butter until tender; reserve.
Arrange each fillet on a square of aluminum foil.
Season each fillet with 1 tsp. jerk seasoning and cover with ? cup onion mixture and 1 tbsp. cilantro. Top with one orange slice.
Wrap foil around fillet and seal like a pouch.
Bake packets at 375° F. for 10 minutes.
Open foil packets carefully and transfer fillet to serving plate.
Note: Packets can be prepared ahead and refrigerated up to 4 hours before cooking.

Pan Seared Tilapia with Tomato Caper Sauce

Makes 4 servings

Ingredients:
4 5- to 7- ounce fresh tilapia fillets
salt and pepper
2 tablespoons olive oil
2 medium tomatoes, chopped
2 tablespoons capers, drained
2 1/2 tablespoons butter
1 1/2 tablespoons Worcestershire sauce
1 tablespoon lemon juice
Preparation:
Seed and dice the tomatoes. In a hot frying pan, heat 1/2 tablespoon of the butter. Add the diced tomatoes, capers, Worcestershire sauce, lemon juice, salt and pepper. Cook on low heat quickly for about 2 minutes. Remove from heat and stir in remaining 2 tablespoons of butter and set aside. Do not reheat.

Salt and pepper the fillets. Heat a frying pan, then add the oil. When oil is hot, add the fillets and brown on both sides, turning only once. This will take about 3 minutes per side. Remove to a plate and spoon the tomato sauce over the fillets.

I think the best thing to put on Tilapia is a creole seasoning. Garlic butter sounds great but I have never tried it. Try the creole seasoning and see if you would like it. I got the idea from the Creole Catch served at Ruby Tuesday's restaurant nationwide (they even use Tilapia). You can buy a creole seasoning off the shelf or you can make your own. I have included a recipe below. You can also use this creole seasoning on meat, chicken, vegetables and in creamy pasta dishes!

Some versions of Creole seasoning blend contain saltbut I leave it out so that you and your guests can salt your food to taste. If you want to add salt in the seasoning start with 2 tablespoons and add 2 more until perfect.

Creole Seasoning:
2 tablespoons onion powder
2 tablespoons garlic powder
2 tablespoons dried oregano leaves
2 tablespoons dried sweet basil
1 tablespoon dried thyme leaves
1 tablespoon black pepper
1 tablespoon white pepper
1 tablespoon cayenne pepper
1 tablespoon celery seed
5 tablespoons sweet paprika
Combine in food processor and pulse until well-blended, or mix thoroughly in a large bowl. The recipe doubles or triples well. Give lots of it away as gifts to your family and friends.

here's a recipe for Tilapia with Citrus Bagna Cauda. I haven't tried it but it kind of matched your description minus the butter and plus the citrus.
