Since most hams are a bit salty even after soaking/scrubbing/roasting, I'd go with a couple of slightly sweet (naturally, that is) dishes and at least one tart and one somewhere in the middle.
Choices:
roasted yams or scalloped white/gold potatoes
melon wedges or baked apples
peas or some steamed broccoli/cauliflower (with or without a cheese sauce)
a spinach salad with gorgonzola and some toasted pecans
cranberries that are heated with 1/2 C. water in a large skillet, covered over medium low heat until the skins pop (about 10 minutes) and adding a tablespoon or two of sugar if the berries are very tart
I think gingerbread served warm with a bit of vanilla ice cream or frozen yoghurt is a great way to end a ham dinner.

I always do scalloped potatoes, the green bean and mushroom soup casserole. And I make a killer mustard sauce that is more of a gravy thing I put on the ham.

1) potatoes, roasted with the ham and some water to soak up all the hammy juices
2) Spinach salad with lemon vinagrette, walnuts and slices of apple or pear
3) Green beans with olive oil dressing
4) creamed fresh corn (not out of a can)
5) Home made gravy, applesauce, and mustard selection
