GINGERBREAD, FOR HOUSES OR MOLDED COOKIES


1? cup butter at room temperature
1? cup sugar
2 eggs
2 teaspoons. vanilla
1 teaspoon. lemon
4 cups sifted flour
1? teaspoon salt
4 teaspoons cinnamon
1 teaspoon ginger
1 teaspoon cloves
3 teaspoons nutmeg
Combine butter, sugar, eggs, vanilla and lemon extract. Cream well until smooth.

Sift together flour, salt, cinnamon, ginger, cloves, and nutmeg. Add to butter mixture and stir until smooth, adding more flour if necessary to form a dough that is almost firm and very slightly sticky.

Wrap dough in plastic and chill until cold and thickened.

Roll and cut to shape. Use dough scraps to form and press on decorative details. Bake at 350 degrees until brown underneath and slightly pale on top.

Note: Three times this recipe makes enough for 21 large gingerbread men (3/8" thick) with enough dough left over for decorations. If you are making a gingerbread house, roll a little thicker for strength. Extra dough freezes very well.

Medieval Gingerbread

makes for a nice crumbly texture. If you like, you can replace half the breadcrumbs with flour to get a crisper, more delicate result.

Makes roughly 20 tree biscuits

450g runny honey
450g fine, dry breadcrumbs (brown or white) OR 225g breadcrumbs mixed with 225g plain flour
1 tsp ground cinnamon
1 tsp ground ginger
? tsp ground white pepper
cloves, nuts, apples slices, rosehips or whatever else you fancy for decorating
string or ribbon for hanging


Put the honey in a large saucepan and place over a medium heat. Heat gently until the honey just begins to bubble. Take off the heat, stir in the spices, then add the breadcrumbs and mix to a dough. Turn out onto a lightly floured surface, form into a neat disc, wrap and chill for an hour.

Preheat the oven to 220C/gas 7 and grease or line a couple of baking sheets.

Roll out the dough on a lightly floured surface to a thickness of about 5mm. Stamp out biscuits using cutters of your choice, and transfer to the baking trays. Use a skewer to make a hole in each biscuit for threading through your string or ribbon, then decorate the biscuits in whichever way you choose.

Bake the biscuits for about 10 minutes in the hot oven, or until dry and firm. Transfer to a rack to cool, then thread with string or ribbon and hang on your tree.

Secret Gingerbread Recipe
225g Self Raising Flour
110g Brown Sugar
110g. Butter
? Egg (Beaten)
1 Large Tablespoon Golden Syrup
2 Teaspoon Ground Ginger
2 Teaspoon Rum or Brandy


Method
1. Cream butter and sugar together.
2. Add the Syrup.
3. Mix spices into the sieved flour together with half the beaten egg.
4. Lastly, add the rum. The mixture should be of the consistency of shortbread.
5. Place in a shallow greased tin and mark into fingers.
6. Ripple the top with a fork.
7. Bake in a moderate oven for 350- 375F. 180C. Gas 4-5 for 20 minutes.
8. Before cool, cut into fingers in the tin.
