Question: my friends and i have a tradition thats called taco tuesday and its my turn to host it this week.. what else can i make with tacos?...appetizers any ideas/recipes would be bril!

for tacos, while your meat is browning, NOT AFTER, but during season with salt, pepper, CUMIN (we mexicans call it comino), red chili powder, 2-3 garlic cloves and about 1/4c - 1/2 cup of finely chopped onions. stir and brown THEN add 1/2c of water to simmer and let the meat soak up the spices. it's ready when the water has been cooked off.
as appetizers we dont usually have any. we eat our tacos with sour cream, hot sauce, shredded cheese, finely grated lettuce, chopped tomatoes, jalepenos, and cold chopped white onions for those who want extra onoins. if you like you can have a pot of mexican beans, spanish rice or gaucamole.

GAUCAMOLE
cut avacados in half, take out pit and mash avacado in a bowl. in it add chopped onions, tomatoes and cilantro season with salt n pepper. or if in a rush and on budget just mash avacado with salt pepper, garlic powder and a dash of tobasco. it's just as good.

beans el charro (soupy mexican style beans)
clean pinto beans and put in slow cooker. in it add 4 slices of bacon (raw!), can of whole tomatoes, 4 cloves of garlic and 1/2 a yellow onion, salt, pepper and again cumin (we call COMINOS). slow cook on low for 6-8 hrs. or on high for 4-5hours.

MEXICAN RICE
brown a cup of white rice in wide mouth skillet or dutch oven, when nicely browned add a 8.oz can of tomatoe sauce and two cups of water, while it's boiling a bit add your chopped onions, 1/2 chopped bell pepper and minced garlic(3cloves), lower heat to simmer salt well and season with pepper then cover with lid and DO NOT open for 20 min.

Lipton's Taco Rice mix, quesadillas, you could do chicken tacos which I think are way better than beef, don't forget the peppers, lettuce, sour cream, etc, you could get some of those frozen taquitos and serve with queso and salsa

vegetables, corn chips and salsa,
cookies for dessert

Or just buy those ones in the box at the supermarket...Zatarain's is an OK brand.

My mother always made Fideo... It is amazing....

1-2 cloves garlic
1 sm. onion
1/3 c. oil
8 oz. fideo noodles
2 tbsp. tomato sauce
1 c. water
1 cube broth (bouillon)
1 tsp. cumin
Salt and pepper to taste
1 c. chicken or beef or vegetables (optional)

Mix together water and bouillon. Mince onions and garlic and saute in oil. Add fideo noodles; brown slightly. Add bouillon and water; simmer 5-10 minutes. Add tomato sauce just for color. Add cumin, salt and pepper.
At this time add any optional ingredients. Quick side dish or easy main dish. I actually like to put a slice of chese in at the end and stir it up for a different twist...

Mexican-Style Black Beans and Rice

2 cups long-grain white rice
2 cups cold water
1 (19 ounce) can black beans, drained and rinsed
1 (14 ounce) can diced tomatoes with roasted garlic
1 cup canned chicken broth
1/3 cup fresh cilantro, chopped
Hot sauce, for serving

Put rice in a medium saucepan; add cold water to cover by 2 inches and swish with fingers to rinse. Drain well in a sieve, and repeat rinsing twice. Return rice to pot and add 2 cups cold water. Bring to a boil over high heat, cover pot, and then turn heat down as low as possible. Cook rice without disturbing for 20 minutes. Remove from heat, fluff rice with a fork and cover to keep warm.
Combine drained beans and tomatoes with their juice in a large skillet. Bring to a simmer over medium heat and continue cooking for 3 minutes to thicken slightly. Add rice to bean mixture, stirring, until blended. Stir in chicken broth and cook for 2 minutes more.
Just before serving, stir in cilantro. Serve with hot sauce.

As far as taco seasoning...after the ground beef is browned & drained, throw in some chopped bellpepper, garlic powder (to taste), chopped onion, 2 teaspoons ground cumin (per lb of ground beef), add water, just over the ground beef, & allow to simmer, to soften peppers & onion. My aunt also adds some chopped tomatoes "for color". I like the "taco Tuesday" idea. :)

Within the tacos you could always add grilled chicken instead of beef and for something fun on the side make a "Mexican Pizza"

How about some hot chili dip?
1/2 lb ground beef
1 medium onion chopped
1 10 oz can chili beef soup ( a can of regular chili works too)
1 16oz can tomatoes& green chilis
1 8oz can tomato sauce
1 8oz can refried beans
1 cup shredded chedder cheese
1 very small can black olives sliced
2 green onions sliced
In a fry pan, brown ground beef, discard grease. Add the onion, chili beef soup,tomatoes& green chilis, tomato sauce & refried beans, Stir to combine. Simmer & cook about 15 minutes. Top with chedder cheese, olives & green onion. Serve warm with tortilla or corn chips. Enjoy.

A big jug of Margueritas works for me!

Spanish rice, salad, cookies, seven layer dip, bean dip, etc.

Homeade tortilla chips

Cut tortillas into strips than into traingles
Heat up Vegetable oil About and Inch in a pan
Add tortilla traingles cook until golden brown

Dips
Salsa
Guacomole

HOmeade dip

Makes about 1 medium bowl
Make as much as you want by adding more ingredients

1 can Chilli- Can use homeade(I use Hormel)
1 package Cream cheese
1 package shredded cheese
1 big bowl or a few mini ramekins

Add a layer of cream cheese to the bottom of the bowl(s)
Than add anothe layer of chili
Top with shredded cheese ALOT
Heat in the microwaveand serve
YUMMY

Chili Cheese Dip

1 can chili (hot or mild, whichever you prefer)
1 package cream cheese
1 handfull shredded Mexican cheese ( usually I buy Kraft finely shredded)
Tortilla chips

Mix the cream cheese and chili together. I put it in a crock pot to keep it warm while serving, but you can make this in the microwave. When the cheese and chili is heated and well blended add the shredded cheese. Heat until melted and stir.

If you are having lots of people you can just double the recipe. This is very easy to make and everyone loves it. Good luck.

spanish rice, and refied beans, they have some really good ones that are dehydrated, you add water and boil for like 7 minutes, then add grated cheese for cheesy beans, a good salsa with homemade tortilla chip, made simply by deep frying corn torillas cut in to chip , in cooking oil

I fry my hamburger meat with diced onions with salt, black pepper and cumin, smells so good, in a separate pan cut up some potatoes (peeled) and boil until tender, drainwater and mix into taco meat! this sort keeps the meat from falling out of the taco shells!
