naah ..... I dont know how this is done, but my mom and wife make it for me and my grand mom before that... and it is great. so i shall tell you what i know and you can try it..
boil the arbi, peel off the skin.
in a pan you make a batter of flour with spices and amchur
and dump the arbi in it.
it gets coated with the batter and is sort of pan fried.
you get some which are crispy brown and some crispy fried batter ....
sort of like making shrimps covered with cread crumbs or corn batter but is diff.

This is an Indian recipe for Arbi Ka Saag. I don't have any others, but the correct spelling is colocassia root. If you type it into a search engine, you may find more. Happy eating!

1 1/2 cups arbi (colocassia root), boiled, peeled and sliced
1/4 teaspoon ajwain (carom seeds)
1/4 teaspoon mustard seeds (rai)
1/4 teaspoon turmeric powder (haldi)
1/2 teaspoon chilli powder
1/2 teaspoon coriander (dhania) powder
1/2 teaspoon lemon juice
1/2 teaspoon oil
salt to taste

Preparations:

1. Heat the oil in kadhai and deep fry the arbi slices till they are golden brown in colour. Drain on absorbent paper. Keep aside.
2. Heat the oil in a non-stick pan, add the ajwain and mustard seeds.
3. When the seeds crackle, add the arbi, turmeric powder, chilli powder, coriander powder, lemon juice and salt and mix well.
4. Serve hot.

*Yeah, sure !!
Its quick & easy too !!!
First , wn u cook yr rice in the pressure cooker, place the arbis on the lid and steam it well.
Remove, cool, peel & cut them into half .......lengthwise.

Now apply some salt and mirchi pdr & lemon juice & a pinch of sugar....... and rest for a while.
Alternately, u may apply salt & the kitchenking & amchur pwdr or chaat masala & rest.
