We get consistent, excellent results when making beef kebobs by doing a couple of things. First, we always grill them over a direct-medium fire on a covered grill. If we're using the gas grill, we start it on high for about 10 minutes to get the grilling surface searing hot, then we reduce the settings to medium for grilling.

On our charcoal grill, a direct-medium fire is one layer of nicely gray coals or about as long as you can hold your hand over the grilling surface for about 3-4 seconds.

We always cut the steak into about 1 1/4" thick squares, and allow it to stand at room temperature for 20-30 minutes before grilling, and allow everything to rest for 5 minutes after grilling to keep the meat juicy.

For medium rare, we grill for about 10 minutes total (using a charcoal grill), or 12 minutes total (using a gas grill) turning the kebobs about every 2 minutes. You can tell how done the meat is by pressing it gently with your tongs. The firmer the meat, the more done it is getting.

If we have guests who like their meat more done, we cut some of the meat into smaller (3/4" - 1") cubes.

At home I just use my bbq at a low-med setting, brush or spray lightly with oil turning often, and don't walk away, when almost cooked then baste with your marinade or sauce. But Then there is always the option of using a flat grill as well. That definitely has a more even heat setting, but I like the smokey taste the bbq offers.
