What can i put in my parmesan baskets?!
Answers: I'm making "baskets" out of melted grated parmesan cheese- not sure exactly what to put in them for christmas appetizers.

Salted nuts and pretzels will work nicely with the flavors of the cheese. Also, you can load them with garlic brussel sprouts at the table and let people watch the cheese melt over the sprouts - you could also use cauliflower florets, broccoli, or green beans as well.

Goat Cheese Mousse
6 ounces goat cheese
1/4 cup heavy cream
1/2 teaspoon fresh thyme, chopped fine
2 1/2 teaspoon fresh Italian flat parsley, chopped fine*
Coarse salt to taste
Freshly chopped black peppercorns to taste
*Substitute the fresh parsley for a combination of lavender flowers, garlic flowers, and basil flowers.
OR try:
3 oysters (removed from the shells)
3 slices of Parma ham
a few asparagus spears, blanched
salt and freshly ground black pepper
Gently melt the butter in a pan and fry the oysters for a few minutes. Wrap the oysters in Parma ham, return to the pan and fry for 1-2 minutes.
Serve the oysters in the parmesan baskets, topped with the asparagus and seasoned with salt and pepper.
OR TRY: MIXED GREENS WITH WALNUT DRESSING
Dressing
1/4 cup toasted walnuts (50 mL)
1 clove garlic
1 x small shallot
1 tbsp Dijon mustard(15 mL)
1/4 cup balsamic vinegar (50 mL)
1/4 cup olive oil (50 mL)
1/4 cup vegetable oil (50 mL)
1/4 cup prepared mayonnaise (50 mL)
Salt and Pepper to taste
4 cups mixed greens (1L)
In a food processor pulse walnuts, garlic and shallot. Add Dijon mustard and balsamic vinegar.
Slowly drizzle in olive and vegetable oil. Add mayonnaise to finish. Season with salt and pepper.
To serve, place Parmesan basket on plate, fill with assorted greens, drizzle dressing on top of greens.
